And my mom looked at me and said, "DON'T say I told you so." I smiled. Thanks Josh for always providing us with amazing new recipes! It was an absolute hit!
I made the sprouts last night too and they were soooo goood! That relish makes the dish! Try it with the foam next time though! Maybe just make it into a cream sauce and lay the Brussels sprouts on top!
I did it! I made every recipe INCLUDING deboning the turkey. The entire meal was AMAZING! Deboning the turkey was time-consuming, but I have never had a more moist and flavorful turkey. The biggest tasty surprise was the gravy. BEST GRAVY EVER! There wasn't one thing that wasn't flavorfully delicious. If you're not daring enough to take on the full menu, the rolls, gravy, brussel sprouts, and mushrooms are a must!

I discovered it when I was following a recipe for millionaire's shortbread. It's delicious, but I will say that mixing it with corn syrup here seems like blasphemy.
Dude, I make that boneless turkey loaf nearly every year (I learned that technique from chef John at FoodWishes a few years ago) and it's AMAZING. It tastes great and it takes a fraction of the time to cook. Something to try if you want something different is brown the skin then throw a bacon weave wrap on it and finish the cook. I still love cooking an entire bird once in a while but nothing beats that loaf. Something that amazes me when removing the bones is when complete it's nearly a perfect rectangle. It seems almost made for that technique.
I was thinking where I remembered that technique from? Chef John definitely GOATED in our family. Every weekend we are make something from him or Josh!
Can you prep the bird the night before? or will it dry it out too much? Say shooting for a 4pm dinner? Casue If i Screw it up lol I can go get a new one!

If you stuff it with stuffing maybe not but I also have thought about dry brining it overnight but I don't know how that would be I might try it with a chicken first. It really doesn't take that long to prepare though. Once you get the carving technique down (which the first time it will take some time). It's really not as hard as it looks. Throw a thermometer in it if you're nervous about cook time. It's really hard to mess up because of having the bones out. Chef Johns vid has a formula per lb. to use and it's always good. Look up the FoodWishes video on this he goes into the technique more (just because it's the topic of that video). Both are great though.

Excellent, because I'm sure that so many viewers will realize that and be inspired to cook their own TG dinners this year! 👍 These are how my mom made the mashed potatoes I grew up with, and they are delicious. She also used to make potato salad with the leftovers. (Mrs O.'s potato salad: Chill the leftovers {if there are any 😉} Break them into cubes or chunks the next day, add about one small finely chopped onion per 2 to 3 cups of potatoes, about a half cup or more of Hellmann's or your favorite mayo, a splash of vinegar, lots of ground black pepper, a little finely minced celery, mix gently. This is the basic recipe & its good.) I never made pie crust by hand after I got a food processor. It really is a lifesaver for bakers. Growing up, my sister and I hated the B. sprouts!! One day she came over for dinner and said she was cooking them. Our mom always boiled them and they were horrid! My sister roasted them and they became a family favorite!! Now when I cook them, I am not allowed to put them on the table until everyone has seated AND I make sure I have one bowl for my sister and my daughter and one bowl for for the rest of us. My sister and my daughter will eat them like they are M&M's. Another example of how just changing a cooking technique can change the taste of a dish. Thank you for showing us this time and again, we appreciate it so much.

I deboned the turkey and did a fennel and citrus stuffing in centre for Xmas last year! Lovely to see big Papa on the hype too, was honestly the best tasting, most juicy and easiest to carve turkey I did ever see! Could not recommend it more
I made the deboned turkey recipe yesterday for Thanksgiving dinner and it was a HIT! The de-boning went well, but man, rolling a 14lb turkey into a log is SO hard! Eventually tied it up nicely and formed it with plastic wrap overnight. All the work paid off, it came out pretty even all around and people absolutely loved it! Thanks, Papa!

I've been on a real kick lately of making gravy with chicken pan drippings, mushrooms and chicken stock. I served it over roasted potatoes the other night and I don't think a potato has ever made me happier. Your food looks amazing, though.

Just an addition to your pie setup, if you get a chance throw that blade in the freezer ahead of time. It can really help reduce added heat to the dough in case a beginner over pulses or over works the dough in the food processor. I try to put all my kneading or mixing parts in the freezer if I can ahead of time.

One small adjustment to this? When you make the pie crust, and you add the beans, put the offcuts of the crust ontop of the beans so you can snack once its done :D
I love how your ideal meal combines "traditional" tastes with many others (including asian flavors!!!). Can't wait to try your maitake mushroom recipe!
1. Cheese ball, crackers, crudite, and Beaujolais Nouveau. 2. Traditional turkey (mix of white meat and dark meat and snag a piece of that skin), sage crouton stuffing, whipped potatoes, steamed green beans, cranberry sauce from the can, and drench it with homemade gravy from pan drippings. Wine is a nice Reisling. 3. Post dinner coma on couch watching football. Sip on a lager. 4. Pumpkin pie with whipped cream drom a can. Coffee. 5. Next day leftovers is open face sandwich with hot turkey, stuffing, potatoes, & gravy. This is a knife & fork job. Yeah that's my favorite meal of all time.
I served most of these dishes today and I just had to come back and thank you so much, best food I’ve ever served, my friends couldn’t stop complimenting everything, and everyone said it was the best turkey they’ve ever had
my go to cranberry sauce recipe is real similar, but specifically uses pinot noir and adds a pinch of (for the love of all things good, home made) chinese five spice. made a day ahead so flavor has time to develop, and I blend half the batch because no one can agree on if it should be a jelly or whole berry sauce.

Had to make a ballotine chicken back in culinary school. I sort of recall that it was really good, but it never since occurred to me to try this at home… with a turkey… on Thanksgiving. It is an interesting option for sure!
My only complaint is the mashed potatoes. To make the best ones, use a high quality Irish butter. You'll love it. 3-1 ratio of potato to butter *mouth drool*

We made a double batch of the cranberry sauce this year, because we loved it so much. I ended up portioning it out in ramekins and freezing it to use for later. It's probably not going to make it to another meal, because it also happens to be the best frozen dessert you've ever had in your life.

I am completely addicted now to butterflying and dry brining. Used to do wet brine....until I saw the ease of butterfly dry brine. I would love to eat a deboned turkey....but making it myself, oh no, I get stressed to easily making a big Holiday feast.

Brussels sprouts are the BEST!!! I make garlic-roasted brussels sprouts with bacon every year for Thanksgiving.....and they're sooooo crispy and yum! Forget green bean casserole....brussels sprouts are where it's at!
Pro tip if you like prepping a few days in advance - take that turkey carcass and roast it, then make your stock with that. Did it last year and it was the best darn gravy I've had in my life!

Deboning will take me past Thanksgiving to Christmas eve. Most of the meat will be on the bone, holding some fatty skin. :/

I used it when I made the treacle tarts from Harry Potter 8 years ago. I haven't touched it since, but it would be an ideal syrup for a pecan pie.

I deboned the turkey and did a fennel and citrus stuffing in centre for Xmas last year! Lovely to see big Papa on the hype too, was honestly the best tasting, most juicy and easiest to carve turkey I did ever see! Could not recommend it more
I made the deboned turkey recipe yesterday for Thanksgiving dinner and it was a HIT! The de-boning went well, but man, rolling a 14lb turkey into a log is SO hard! Eventually tied it up nicely and formed it with plastic wrap overnight. All the work paid off, it came out pretty even all around and people absolutely loved it! Thanks, Papa!

Just an addition to your pie setup, if you get a chance throw that blade in the freezer ahead of time. It can really help reduce added heat to the dough in case a beginner over pulses or over works the dough in the food processor. I try to put all my kneading or mixing parts in the freezer if I can ahead of time.

One small adjustment to this? When you make the pie crust, and you add the beans, put the offcuts of the crust ontop of the beans so you can snack once its done :D

Even though we don't care about Thanksgiving here in Europe, the food culture and traditions around it are awesome and I really want to recreate it
Okay but now I want a whole video of different ways to cook Brussel sprouts
1. Cheese ball, crackers, crudite, and Beaujolais Nouveau.
2. Traditional turkey (mix of white meat and dark meat and snag a piece of that skin), sage crouton stuffing, whipped potatoes, steamed green beans, cranberry sauce from the can, and drench it with homemade gravy from pan drippings. Wine is a nice Reisling.
3. Post dinner coma on couch watching football. Sip on a lager.
4. Pumpkin pie with whipped cream drom a can. Coffee.
5. Next day leftovers is open face sandwich with hot turkey, stuffing, potatoes, & gravy. This is a knife & fork job.
Yeah that's my favorite meal of all time.

my go to cranberry sauce recipe is real similar, but specifically uses pinot noir and adds a pinch of (for the love of all things good, home made) chinese five spice. made a day ahead so flavor has time to develop, and I blend half the batch because no one can agree on if it should be a jelly or whole berry sauce.
Great suggestion to blend half of it! I never could figure out how to make everyone happy!

Had to make a ballotine chicken back in culinary school. I sort of recall that it was really good, but it never since occurred to me to try this at home… with a turkey… on Thanksgiving. It is an interesting option for sure!
My only complaint is the mashed potatoes. To make the best ones, use a high quality Irish butter. You'll love it.

We made a double batch of the cranberry sauce this year, because we loved it so much. I ended up portioning it out in ramekins and freezing it to use for later. It's probably not going to make it to another meal, because it also happens to be the best frozen dessert you've ever had in your life.

Brussels sprouts are the BEST!!! I make garlic-roasted brussels sprouts with bacon every year for Thanksgiving.....and they're sooooo crispy and yum! Forget green bean casserole....brussels sprouts are where it's at!
