Brinjal Pickle | Aubergine Pickle | Eggplant Pickle

  • This Brinjal Pickle is one of my all time favourites. Served alongside a curry and rice or dal and rice, it works an absolute treat.
    Ingredients -
    2 large brinjals
    20 cloves of garlic (small to medium sized cloves)
    About 3 inches of ginger
    1 tablespoon kasoori methi (dried fenugreek leaves)
    1 teaspoon cumin seeds
    12 cloves
    4 teaspoons Kashmiri (mild) red chilly powder
    1/2 cup sugar
    3/4 cup sunflower oil (or any other neutral oil)
    1 1/2 teaspoons mustard seeds
    2 sprigs of curry leaves
    4 1/4 teaspoons salt
    1 1/2 teaspoons turmeric powder
    3/4 cup apple cider vinegar

    Looks like a great recipe, I've got loads of courgettes, so I'm going to try using them with your recipe.

    I will try this. The way I prepare is I first fry the brinjal chunks in mustard oil. Then use the same oil to fry the masala add the brinjal pieces

    After squeezing the water from the brinjal,you dry it or directly put to fry in oil .?

      Hi Rita, thank you. It's good to be back. I dont really weigh the brinjals. I will try and weigh a couple of a similar size and let you know.

      @@TheAspiringHomeCook Thank you. I am British Columbia. I used the same recipe for apples. I just got s so many apples this year. That I am running out of things to make with it. Made Apple/Ginger jam, Apple chutney and the pickle. Going to make some cake. Love all your recipes. Yesterday made tuna cutlets and everyone love it. ❤️

      Yes you can. Start with about 1/2 a cup of vinegar. I would recommend tasting the masala when you check for seasoning and add more as needed.
