Many people prefer freezing fresh foods that they grow themselves or buy in the supermarkets or farmers' markets. Canning both high-acid and low-acid food is common here in the States, but canning low-acid food, such as meat, fish, and some vegetables, is seldom seen without using a pressure cooker/canner. I'm certainly going to try your version and see how successful I may be! Isn't it lovely when we women can get together and share information and knowledge with peace and goodwill? How sad that our world can't see that the gentle, simple and generous path we have been taught for more than 2000 years is the true way to go!
Agree! So, what temp do you think the pork is cooked on for 3 hours? Low? Is it originally boiled on high, then turned down to low for 3 hours? Then when covered in lard and placed back in pit for 20 minutes… what temp? Low again? Finally, I wonder how long it can be kept in the jar safely… a year? 2 years? 30 years? I have questions so I do this safely:)

❤ yesss. I've made almost all of them. I also made the meatball one for my sons who love meatball subs. Everything came out perfectly. The beans with the bacon was delicious. I made a soup with it. I'm now currently focusing on meats only and potatoes. I can more-or-less add to it for soups. My favorite is the one with the potatoes, carrots and pork..

@@RN4Veteransi Kilo pork cut in three pieces, 2 teaspoons salt, 2 teaspoons paprika, 2 teaspoons mixed herbs, 1 teaspoon granulated garlic, about 1/2 teaspoonful black pepper.
Place in bottles, cover with lids but don’t tighten. Place in pot, add water up to level of meat. Cover pot and boil for 3 hours.
