    Today I’m going to be sharing with you how easy it is to make tamales de pollo y rajas , now let me tell you the best tamales are moist, fluffy and full of flavor the chicken has to be juicy and wet with its sauce! After you make your own masa and you make it float you will taste the difference and will never use store bought masa again, seriously making your own tamales is life changing, and I mean yes they are time consuming but you only make tamales at least once a year, why not make the BEST!? use your extra little hands and create memories!

    I M P O R T A N T ⚠️
    Make sure your masa floats! Making tamales in different temperature does make a difference on how much broth the masa will need to hydrate! When my ac is on, I usually use between 7-8 cups of broth during the colder days it only takes 6 cups of broth. if your masa dont float that means its not fully hydrated so add a little more broth then mix for 2 minutes and test it again until it floats. light and fluffy masa means soft and moist tamales! its very important for the masa to float TRUST ME you can taste the difference. dry tamales are not good!!!! the masa is what will make the tamal perfect!
    Tip: if you don’t have a stand mixer you can also use a hand mixer or use your hands but keep in mind you will mix for at least 45 minutes to get the right consistency !
    Ingredients: makes 40 tamales
    For the chicken, boil 5qs water with 1 onion, 6 garlic cloves (1/2 head) salt I used 1/4 cup, 3 bay leaves and 2 tsp peppercorn
    7 lbs chicken breast with rib
    9 poblano peppers
    5 green hatch peppers
    25 tomatillos
    jalapenos, I used 3
    green chile arbol or serrano peppers
    1/2 white onion
    4 garlic cloves
    1 1/2 tsp black pepper
    1 tsp oregano
    1/2 tsp whole cumin
    chicken bouillon; I used 1 1/2 tbsp
    bunch of cilantro
    salt to taste
    For the masa
    6 cups instant corn masa for tamales
    1 1/2 cup lard
    5 tsp baking powder
    4 cups broth
    4 cups hot water plus needed
    1 serving of love 💕

    Great way to do the masa!
    Guys don't forget the corn husk need to be rinse and soak in water before you put the masa. Im just mention it for the people who will try this recipe for the first time.

    Claudia, you just gave me a couple new ideas on Tamales! Thank you so much! I never thought of using Salsa Verde, but it makes perfect sense. I usually use Not Fat Plain Yogurt in place of Crema or Sour Cream. I bet the Salsa Verde adds a wonderful tang to all Tamales. Thank you so much!

      You should be able to but make sure to wrap it in plastic and cover really well. Your tortillas will come out a little denser due to freezing it tho.

    Claudia, this is the best tamale recipe! Question: are the husks dried before spreading the masa! Also do you keep an eye on the water when steaming to add if needed! Someone told me to put a penny with the water ( well washed) but I never heard the penny and at the end, the tamales in the bottom were burning! It was my first time, lol. HELP!

      Panela or queso iaxaca just keep in mind regardless of cheese you use it will not be stringy it will be soft and melted except for panela but queso Oaxaca with this tamales or rajas is the best ❤

    Did you get the broth from the pot or canned? Also, why are the husks at the bottom of the pot too? Is there a flat part with holes for the water to steam them or is it set on top of husks which is directly on water? I can’t find any tamale recipes that go through each step thoroughly. Looks amazing tho!

      The broth is from the pot and to steam there’s a pot that has a bottom layer with holes.

    Every time I do my masa it never floats but it always comes out heavy but spreadable .. I don't know what I keep doing wrong they still come out delicious and the masa is moist

    How much water do I put in the steamer? And I'm set and ready for tamales. The stand mixer makes this easier and faster. Thank you for promoting it in your store. I finally got mine. Gracias por esta receta. Que Dios te bendiga siempre y en todo momento. 🌿🌹🌿🤗

      The amount of water will depend on your steamer pot usually it has a line and then you place the divider as long as water don’t go over it ☺️ stand mixer makes it sooooo much easier
