A tip for making your tofu taste better: Freeze it first. When tofu is frozen the water inside expands as ice crystals which poke holes in the tofu and make it porous. When defrosted in a microwave and allowed to cool down you can then gently squeeze it to get out all of the excess water. Your tofu should shrink to about half its size once all of the water is out. Because the tofu is no longer saturated with excess water it will fry up nice and crispy. And because it is now porous it will soak up the sauce and other flavours much better.
Chef doesn't wash packaged shimeji, enoki or maitake mushrooms sold at stores in Japan :) This will prevent the mushrooms from absorbing water and losing the flavor. When Chef prepares shiitake, she usually cleans the cap with dry paper towel. You should wash wild mushrooms though :)

When I'm being super lazy i sometimes only make the mushrooms and sauce and eat just that 🤤 so good. I have also cubed and pan fried the tofu then made the toping and mixed them rather toping it. Always tastes so good!

You can substitute 1 tbsp sake and 1 tsp sugar for 1 tbsp mirin :)
