It's hard to understand when native speakers use words in a different meaning. However, with "it's interesting" to mean "weird," we usually say it slowly and indicate with a facial expression that we are using the words in an ironic way. Regarding synonyms for "interesting," I would say "fascinating" would be a good one, but most people just use "interesting" and young people might say "dope"

American here, and it’s totally fine to use “interesting”. She can’t even lose her accent, so please don’t rely on her to teach English
That’s exactly what I said. Saying “it’s interesting” is absolutely fine. However, instead of constantly repeating this phrase it’s also ok to use alternatives.
