Step by Step - How to Smoke a Brisket - Using my RECTEQ (Rectec) 590 Pellet Grill / Smoker

  • In this video i am going to show you step by step how to buy, trim, season, smoke, and slice up a brisket! I use my RECTEQ (Formerly RECTEC) 590 pellet grill / smoker but this process will work for any type of smoker or pellet grill (Traeger, Pit boss, Weber, Green Mountain Grills, Camp Chef, Grilla Grills, Z Grills, etc.)

    🐮🥩 = 100% Grass Fed Texas Brisket / 7.9 lbs
    🥩🔥= Central Texas Style using only sea salt and black pepper!
    🥩🔥= A Brisket needs to be cooked low and slow, Minimum time about 8 hours up to 12+ hours (about 1 hour to 1 hour & 15 min. per pound). To have the brisket ready for dinner I trimmed it the night before and then woke up at 5:00am to get it up to room temp, season and start smoking it!.
    I smoked it at 250 for about 7 hours then reduced the heat to 225 (it was cooking to fast) for 2 hours, then back up to 250 right at the end for the last 30-60 minutes to get the internal temp up to 190-195 degrees, Then wrapped it up in butcher paper for 1 hour to rest (The brisket will continue to cook during that hour, that is why it's important to take it off the smoker at 190-195 degrees or it will over cook).
    🥩🔥 = I try not to wrap my brisket in foil (Texas Crutch) although it helps it cook faster and stay moist, to me it tends to taste more like a pot roast then brisket with less smoke taste and the bark isn't as crunchy. Using butch paper to wrap it at the 4-5 hour mark is a good compromise, it helps speed up the smoke time a bit and still allows smoke in and helps keep the meat moist.

    Thank you so very much for this video. I got my RT-590 a week ago and then we followed your video to do our first Brisket and it was amazing!!!     Thanks for the great video. I made my 11 pound brisket for the family for the very first time last Christmas and it turned out perfect. I can’t tell you how easy it seemed with the instructions you gave on my recteq 560. It was the first thing I ever made on the pellet grill so I was a little bit concerned since everybody was eating it but it was fantastic. Thanks again

    Nice Boykin Spaniel...South Carolina State Dog. Have one myself...awesome family dog, bird hunter, and loves the water! I've been smoking meat for years and I'm always "checking out" the other guy's method(s) and knowledge. Great video! I'm in the market for a new grill so that 590 you have might do it. You're right sir, here in Texas, salt & pepper is pretty much all a good brisket needs. Though sometimes trying rubs & such don't hurt.

    Great looking brisket!. I have the 590 on the back patio and a trailblazer that we carry in our 5th wheel. Lately I’ve been able to get prime brisket at Costco where I live for $2.59 a pound.

    Quite similar to what I do, with a couple differences. Temp 230, and I wrap with peach paper once I hit the stall. Pull it at 203, into a cooler covered with a towel for maybe 2 hours before unwrapping and slicing.

    Nice video...enjoyed the cook. Am I the only one that notices the front lowerportion of Rec Tec grills are always a mess? I have 4 pellet grills and none of mine look like that or do that.

      Thanks for watching! That’s a good point, maybe because the front is stainless steel and most pellet smokers in that section of black powder coated steel So you don’t notice the dripping?

      Thanks for watching James! I think you will love the RecTeq 590 or even their newer stainless model. Pretty significant upgrade from a Traeger, the build quality and materials are at a much higher level. I have nothing bad to say about mine, I have had mine going on 8 years and not a single issue.

    Can I ask why you didn’t wrap it at around 165 ? Everyone seems to wrap it then, so I’m curious? Thank you

      When you wrap the brisket at the, "Stall" it will help speed up the process, here we call it the , "Texas Crutch" but for me it makes the meat get to tender making it more like a pot roast texture. The best BBQ spots here in Texas don't wrap brisket until the end when resting it and they also never inject the meat or use anything buy salt and pepper.

    Nice video. I just ordered the RT 590. Why not wrap in the paper or foil to boost through the stall? Any thoughts on wagu tallo or using the rendered fat from the trimmings?

      Thanks so much for watching, you are going to love your 590! for me i typically don't like to wrap during the cook because it can lead to a, "Pot Roast" type of texture and is can also make a softer bark but you don't have that extra 1-2 hours it helps speed things up! With brisket you're better leaving the soft fat on and letting it render down then adding extra fat.

      Hello Mike, thanks for watching! Yes the RecTeq puts out great smoke! The people who say these are no match to a stick burner haven't used a modern pellet smoker! I would say that the smoke and flavor are indistinguishable from this vs a stick burner maybe even better because it's so much more consistent. The trick with a good pellet smoker is to have heavy gauge metal which keeps the heat even. To get this you really have to get to around the $1000 mark

      Thank you so much for watching and I appreciate the kind words and you taking the time to comment! I absolutely recommend it spritzing the brisket, and using a water pan it helps keep the brisket moist and helps develop the bark especially if you’re not going to wrap in foil. I prefer not to wrap my briskets in foil because to me it can easily come out more like a pot roast in a brisket texture wise. I try not to open the smoker because I don’t wanna lose the heat but when I check in about the five hour mark I try to quickly spritz it with cider vinegar at least once during the smoke!

      Thanks so much for watching, I greatly appreciate it! The 590 is great and more than big enough for our family of 5! For Thanksgiving every year I smoke two giant turkeys on it, you can easily fit two full-size packer cut briskets or five racks a spare ribs laying flat or if you buy a rib rack you can get 10 or 12 racks on it. So unless you need to do more than that at any given time the 590‘s gonna be great for you!

    Do you probe for tenderness? 190 seems a little early from what I’ve experienced. But, I’m still learning!

      Thanks for watching and taking the time to comment! It’ll continue cooking another 5-10° after you take it off you really know just by the feel when you pick up the whole brisket if it’s done! The final temperature probably more around 195 then I wrapped and let it rest for about an hour before I even start slicing

    Sea salt though? I would think that Kosher salt is the way to go...

      Thanks for watching, now that you mention this, I probably did use Kosher and just said sea salt by mistake! Sea salt can get a little too, “salty” when using in a rub! But i do use sea salt on steaks!

    Real good with the information... Critique though, the volume changes when you add music is annoying. Thats something you can fix at edit,, But the work and information was excellent,,

      @@HarplandProductions Stella is ours...Got her shaved down (everything) for the summer so she can run in the corn/sunflower fields (dove field) without getting cuckleburrs and hitchhikers all stuck in her hair. Just subscribed to your channel. (I have a RT Bullseye/BGE and bought my dad a 590 for the lake house 2 weeks ago).

    Great video! I like your editing style 😎 I have been cooking on a traeger for the past couple years but looking to upgrade and torn between the RT-590 and the Grilla Grills Silverback. How do you like your 590? You should put that 30lb hopper to use and try a long overnight cook. I smoked a 16lb brisket for like 16 or 18 hours - season heavily with brisket seasoning and bbq rub, cook with pecan First 8 hours at 190, wrap it in paper then raise up to 225-250 until internal hits 200, and rest it in a dry cooler. Bark is insane, you will not be disappointed! Check out howtobbqright

      Thanks so much for watching Anthony! When i got my 590 did check out the Grilla Silverback but at that time it didn't compare, it didn't have wifi capability and it was a thinner gauge of steel so for around the same price the 590 was a much better smoker. I think Grilla has stepped up a lot since then and now they are pretty even, The 590 has more room for larger things such as turkeys, etc but the Sliverback is prob better for cold weather due to it have double wall construction. I don't think you can go wrong with either for under $1,000

      No shame is admitting that Brisket isn't your favorite. To be 100% honest i would take ribs over brisket, but I also do enjoy brisket :) 10+ years ago Brisket used to be the cheep cut so for the $ it was great and you got a lot of bang for your buck but the $ is getting crazy now, for a prime cut brisket it can easily get into the $100 range for a large prime packer cut. Every once in a while you find a choice cut one under $50 and that's a great deal but a lot of times if i am going to spend $50-100 on meat i would opt for Tri-Tip which is a much better cut of meat and for half the price now! So when i just want beef / steak Tri-Tip wins everytime! Brisket becomes more of a tradition for me and part of the fun is the time and process of smoking it and in the summer there is something therapeutic about spending all day smoking and possibly drinking a lot of beer and it brings people together more than just grilling a steak. for me it's like making turkey on Thanksgiving, Turkey isn't my favorite either but it's an experience.
