Pork crackling is also hands down one of my favourite indulgent snacks. Love the little sidewalk restaurants in Thailand. If you guys come to SA please try kaaings and pap ( lamb fat with a bit of meat still on rendered down like cracklings till very crispy served with pap and even a drizzle of the flavoured lamb fat left behind in the pot. Far from healthy but oh so good! Sitting here watching this while having my breakfast ( a rich vegetable and herb broth with spicy pepper) Much love a blessings to yourself and lovely Li 😊🙏❤️🤗

The daily wage difference being so vast, everything feels nearly free at first, I guess it could continue if only retire here and never work here? But yes, prices here are double even from when I moved here in 2009. So crazy, most of Asia is the same... anyways, thankfully we can still go off into these mountain towns and remember a time passed by. THis place is so magical, Mae Hong Son is incredible. Really enjoyed this video Joel, I have eaten many khao soi and it is often the dish I crave when thinking about Thailand. I have made it quite a few times too, to try and ease that craving. I didn't try nam ngiao noodles, but they look so good. Definitely will make sure I try them when I am back in Thailand soon.
Oh... That Nam Ngiaow looks so incredibly tasty. Gra-chai is such an intense element of this dish. And I'm so happy to have this root in my garden as well now although it's not very common in the south. Now I can cook many yummy Northern dishes with gra-chai... Cardamom as I know it there's just two kinds available on our markets: First กระวาน or กระวานไทย which grow also in Thailand, it has a round shape and brown colour. The other one is กระวานเทศ or ลูกเอ็ล which grows in India, Sri Lanka - that one has an oval shape and green colour. I also assumed that กระชาย is being used a lot for cooking อาหารป่า... I am also looking forward to see both of you down here in the South. Enjoy!!!!
LOVE Mae Hong Son! There's a few guest houses right on the lake with a view of the Wats (temples) on the other side, lit up at night, it's breathtaking. I didn't see any of the Dok Niew flowers in your Khanom Jin Nam Ngiao, maybe they cook them in a seive and take them out. I'm glad you mentioned them in your written comments though. They're like a "poor man's Saffron" though not as strong. We have a HUGE bag of them from my wife's brother. We could have Khanom Jin Nam Ngiao every day for a year with all we have. Khao Soi? well, one can never go wrong with Khao Soi; I think I've only had one truly bad bowl of Khow Soi in ten years of trying out different places. I enjoy keeping the condiments separate, even the crispy noodles, then customize each spoonful, so good!
Ok Don, thats a proper message today, SO many things to get excited for, be thankful for.... however. My favorite part is at the end (although your "NamNgiao for a year" is beautiful too :) ) - you say "After 10 years of trying different places, I've only had 1 bowl that was truly bad." THIS is one of the top reasons to just fall hopelessly in love with THailand, and not just for the food. hahahah I love this!!!!! Yes, oh man. I am kinda new to Khao Soi myself, maybe still in my first 50 bowls I guess but, I guess for me it would be something from Esaan, and yeah, its honestly an extreme challenge to find a "bad meal of Thai food," oh man.... still laughing at this :) :) :) :)

I have been cooking for my family alot since I was in high school, many things. But mung bean sprouts and zucchini stir fried was my first creation. Given that I was watching the Vietnam war on a tv when you could buy tubes for the tv from the local grocery market to fix it. Yeah, as an electrical engineer, remembering being able to buy electron tubes from the local market is wierd.

Really enjoyed this video Joel, I have eaten many khao soi and it is often the dish I crave when thinking about Thailand. I have made it quite a few times too, to try and ease that craving. I didn't try nam ngiao noodles, but they look so good. Definitely will make sure I try them when I am back in Thailand soon.

Oh... That Nam Ngiaow looks so incredibly tasty. Gra-chai is such an intense element of this dish. @@JoelsTastyRide Hello Joel. Thank you so much for your answer. Still so many things to learn. For example I've never heard of this word กานกระหว่าน... Cardamom as I know it there's just two kinds available on our markets: First กระวาน or กระวานไทย which grow also in Thailand, it has a round shape and brown colour. The other one is กระวานเทศ or ลูกเอ็ล which grows in India, Sri Lanka - that one has an oval shape and green colour.
I also assumed that กระชาย is being used a lot for cooking อาหารป่า... I am also looking forward to see both of you down here in the South. Enjoy!!!!

LOVE Mae Hong Son! There's a few guest houses right on the lake with a view of the Wats (temples) on the other side, lit up at night, it's breathtaking. I didn't see any of the Dok Niew flowers in your Khanom Jin Nam Ngiao, maybe they cook them in a seive and take them out. I'm glad you mentioned them in your written comments though. They're like a "poor man's Saffron" though not as strong. We have a HUGE bag of them from my wife's brother. We could have Khanom Jin Nam Ngiao every day for a year with all we have. Khao Soi? well, one can never go wrong with Khao Soi; I think I've only had one truly bad bowl of Khow Soi in ten years of trying out different places. I enjoy keeping the condiments separate, even the crispy noodles, then customize each spoonful, so good!
Ok Don, thats a proper message today, SO many things to get excited for, be thankful for.... however. My favorite part is at the end (although your "NamNgiao for a year" is beautiful too :) ) - you say "After 10 years of trying different places, I've only had 1 bowl that was truly bad." THIS is one of the top reasons to just fall hopelessly in love with THailand, and not just for the food. hahahah I love this!!!!! Yes, oh man. I am kinda new to Khao Soi myself, maybe still in my first 50 bowls I guess but, I guess for me it would be something from Esaan, and yeah, its honestly an extreme challenge to find a "bad meal of Thai food," oh man.... still laughing at this :) :) :) :)

I have been cooking for my family alot since I was in high school, many things. But mung bean sprouts and zucchini stir fried was my first creation. Given that I was watching the Vietnam war on a tv when you could buy tubes for the tv from the local grocery market to fix it. Yeah, as an electrical engineer, remembering being able to buy electron tubes from the local market is wierd.
