    I usually broil the tomatoes, and the garlic, under the broiler in my oven, and it's done in less than 30 minutes. I do the same with eggplant; sometimes I do eggplant in the pot like Renee did, but I add diced tomatoes; it taste very nice, and the colour is also lovely! Everything that needs roasting, I broil them under the broiler.
    I had given away my Tawa since 2001, and I started making roti in a frying pan, that I bought especially for roti's. When I'm making only two Sada roti's, in my frying pan, and it's time to let it puffs up, I flip it over, and press the ends with a folded tea towel, and keep moving it around until it's done.
    When I'm making ten or twelve Sada roti's, as each one is finished cooking in the frying pan, I place it into my microwave, and press one minute, and in eighteen seconds it's puffed up perfectly; it takes less time when you place it in the microwave to puffs up, and you'd also finished making your roti's, in half the time.

    ok, I learned a lot of stuff today. That sada roti on the fire is really new to me and a nice twist. plus, those roasted tomatoes and garlic is also different.

    Good going girls !!!The yeast in the flour helps it to rise a bit better. . .We call it pita😀It's Israeli.Our is roti without the yeast.....

    Hi Renee I'm Venezuelan and I'm a big big fan of Caribbean food. I just have a question about the eggplant, shouldn't we salt the eggplant and leave it to drain all the bitter juice? I'd appreciate your opinion. Peace!

    Leaving the skin on the baigan probably gives it more texture than the traditional way which is like a puree.

    Hi Renee , I love you sooooooo much . I love you and I am very proud of you. I went to Crave with my husband and ask for you , I was devastated when they told me you gone aboard to further your studies in Culinary Arts .Is Natasha is chef too , I will like to know . I can't help and notice Natasha is not wearing her hair net, 🤔🤔🤔🤔and she is kneading flour , that's a big , big NO NO , in the cooking business .     I wouldn't try no "twist" tonmake to make bhaigan choka. Traditional recipe doesnt even need oil. So nope to this recipe.

      I agree, people who add a "twist" really don't know how to make the authentic thing and the traditional cooking is spoiled. Real cooks dont need to add yeast to sada roti. Check out taste of trini channel for authentic Trinidad cooking.

    This look good
    ..now only because I am a Chef by Trade and what u guys said about recipe not being set in stone is true..But I prefer and Rather my traditional Tomato choka...I am almost 50 yrs old and I find personaly way too much of our youths prefer to run for the short cuts versions.I just see it as lazy and straying away from tradition..Now if you does practice both versions well I respect that very much.
