There's a sea of change. In early 80's the ingredients included hordes of vegetables like brinjal, bottle gourd, pumpkin, green peas, cauliflower, onions and chane ki dal. I witnessed one such making just outside the main entrance of Bombay Central. Only amul butter was used, no secret masala pastes full of red artificial colours. Just ₹ 20 per serving with 3pavs. Those were the times ⏳
Now we have butter instead of those . I mean it's literally butter bhaji with more butter and potato. No wonder we indians have heart problems . We are killing each other.
Indeed potato is loaded with carbs. The vegetables mentioned in the comment above have nutrition and have very less calories as well which means no excessive carbs. Our normal Indian food is anyways loaded with carbohydrates. In order to give red color, one can use boiled beetroot as well.
I never understood why the TV Programs (worldwide) just used to do Masterchef challenge just with chefs from restaurants or famous persons but never with great chefs from the street food ... Imagine how nice would be a Masterchef challenge with persons like this sir who prepares woderfullly the recipe ! It would be great a kinda Masterchef - Street food
Anthony Bourdain (RIP) had a series where he went around the world trying local stuff like this, which I really enjoyed. I don't think these people would be good in the high production crazy manufactured reality competition shows, you need disrespectful crazies for those types of shows. We need another TV show where a host goes around trying the really good local stuff. This is why I prefer to watch street food videos on TH-cam over reality shows, this is five times more interesting, and looks way more delicious than anything I've seen on most TV shows.

Mumbai street food is the best , no faltu tamasha... only good taste ..almost all places serve amazing stuff...from the roll at mafco to achija in ghatkopar to the sandwiches on every corner ..great stuff

My Favorite Pav Bhaji places are 1 Shivam Sundram Restaurant in Thakur Complex kandivali east and 2nd in Juhu Beach Pav Bhaji this 2 places are so good I love it
Rs 90×80 plates=7200 rupees with maximum 4000 rupees stuffs into investment.. so 3200 rupees earned with one slot, if only two slots are made in a day then total earning is 6400 rupees in a single day..! Now this is business..😍

Pav bhaji is eaten mostly by its aroma and very little by its flavor. Therefore, th masala that one makes must be made everyday and not stored for days / wekks/months. That is the secret of many of the welll known street side pav-bhaji walas. Of course the butter has to be equally good.
