Thanks Allan for the info, that's critical for your homestead. I'm super interested in this system. Only thing I can recommend is drain everything in cold weather to keep your pipe from busting.
Actually, I drilled a “weep hole“ about 3 feet down from the well head. The water level should drain down to that, and not allow anything to freeze. In other words, there should be no water in the exposed plumbing.
I don’t think so. It hasn’t yet. It’s run all day long on sunny days. Even if it does, the “low water sensor” will turn the pump off if the water gets too low.
You did a great job-very well thought out. It's really a smart set up. If you think about it, when it's sunny you're getting water from the well and when it's cloudy there's likely rain so you're getting water from the Heavens and have minimal evaporation even if it isn't raining so you'd be covered no matter what. I don't know anything about ponds and fish and oxygenation-can you monitor the outflow to see if you need to install an aerator? Again, I know nothing about it so ignore me if I'm off base. And FWIW, if Alan's happy, we're all happy.
I don’t know how to monitor the oxygen level. I’m sure there’s some kind of doodad that would calibrate it, but I’m probably too cheap to buy it 😊. Hopefully, you’re right about the sunny/cloudy days. I might have to run it at night on batteries, but I hope not.
Is this the kind of pump that would be used or could be used for a gravity rain catchment system to pump to a garden like using drip line or pvc watering lines..?

You bet. You would just need to pump into a storage tank that is elevated.
