Pasta making is an art (which you seem to master beautifully). I had to learn it, because my wife and me are on keto and therefore can't eat normal pasta (and we're not living in a part of the world we're you can buy keto food in the next supermarket). We (I) have to make our own. Obviously, because we both like pasta and make it often, we invested in a manual pasta machine, which makes life a lot easier. It feels quite natural to me to get the consistency right. After a recent event where tried to teach people I have realised it's not as easy for some. What flour do you use for keto pasta? I was on a keto diet for over a year but never tried a zero carb pasta.
I use my own flour substitute mix, Mark, consisting of flax seed, wheat fibre (or oat fibre, if I want it to be lighter in colour) and wheat gluten. It's not zero carb but low enough in carbs that we can stay under 20g of carbs a day. It took me quite some time of trial and error to get the mix and consistency right, but I've got it down to a T now. We do all kinds of pasta dishes, stir fries and what not with it. It's a life saver. I also bake my own keto bread, make my own keto chocolate, etc etc. I haven't got a van yet (but have been dreaming about vanlife for years now), but once I get one I'd like to do a vanlife keto channel on TH-cam. Ah, yeah. Where would we be without our dreams, right? Anyway, I subbed your channel, because I like the way you roll and am very much looking forward to seeing what you come up with in the kitchen.
