it is simply choux pastry filled with custard. she does make the custard from scratch, but you could as easily use custard powder if you wanted it to be quicker. Not a lot to it really

It is easier to roll if you roll it 10 min or so after taking out of oven. It will then be easier to roll again when the filling is added. An alternative filling would be using a pudding powder (Ilike lemon) and adding a bit of butter for the thickness. Also making a cream cheese with vanilla and a bit of milk is also an alternative.
