    Made this last night. Added some dark chocolate and lime juice to sauce and used standard 85/15 ground beef. Results were fantastic! Will be making this one again for sure. Might use more corn chips to help bind the ground beef and add cheese to the fatty itself. Thank you for constantly posting killer recipes!

    I make an Italian version. When I put together the meat I pay it out into a rectangle, add a layer of grated cheese about 1/2”-1” in from edges and roll so it looks like a jelly roll and seal up sides. Bet that would be good here as well. Looks great!

      My main request was for the gumbo. My point was, as an added bonus, you can make a Tips & Techniques episode about a roux...as an incentive to make a gumbo episode.

    Each ingredient is something that would pair nicely with every other. Appetizing and thoughtful preparation as well! Looks like a great meal, and I'm positive that it will taco too.

    This is awesome. The only thing I would add is some high temp/low-moisture cheese in the mix to give it those nice little gushes of goodness because you can never have too much cheese!

    Chef Tom, I'd really like to see you do something with round steaks. They're a tough piece of meat and I have a freezer full of them from the 1/2 beef we bought.

    Im digging the frog mat,I use a metal mat for smoked meatloaf ,it wouldn't roll...and that's a fine looking meatloaf

    I wonder if it possible to do a vegetarian version of that with mushrooms ? That would be equally good. I say that not from being vegetarian, I'm not. But it would be an interesting part 2 ... a bit like Star Wars the Empire strikes back.

    The only way I make meatloaf anymore is smoked meatloaf. I cook mine indirect on the Weber Kettle. The roasted corn and chilis is a nice twist. I wish you didn't have to work Cattleman's products into every video, but I can work around that.

    This guy is so sick... can't say it enough. Everything he does is perfection!!!
    Only criticism is to add a bit of avacado crema and more of that enchilada sauce on top at the end!!!
    I sit here massively shamed ONCE AGAIN! As I am literally typing my "critique"/only comment... he is literally saying what to add/do in relation to my tiny critique.... smh 😥😥😥 I sit in shame as he is the master 🙌🙌🙌🙌
