Here's my honest take even though mai is older than tunks, we have to consider that trunk is a saysian, so he's not exactly human, and he can basically live longer than a regular human since his slow againg, so the idea of age is number become a bit theoretical and should be reconsidered if its even wrong.
I think akira toriyama just makes people whatever age is convenient for his story. He needed her to be the same age as trunks so he could give trunks a girlfriend without putting effort into creating a new character that fans have to accept, so she is now whatever age trunks is. Goku and Vegeta never age so he can keep writing about them until the end of time. Bulma looks young so that we always have a milf to look at. Really, it's just lazy, yet lovable story writing.

Timelines where they successfully defeat goku, however it's after picolo saga and picolo ruled earth, until raditz killed Picolo and Picolo Jr. Gohan and Goten wouldn't have been born and Goku wouldn't have been revived because dragon balls don't work the same way, vegeta was the main protag for the whole series of Z, but for the Super saiyan god ritual, It's Vegeta, Raditz, Nappa, Trunks, Broly(Yes they recruited Broly now), and Broly's son.

I think why in future, Mai will be in the only gang members who survive, because she decides to side with Trunk and the good side rather then being with Pilaf.
And the reason why she decide to side with the good side after knowing that her future self will be friends and probably marry the future Trunk.

I'm sure that when she was turned as a child her brain chemistry changed much more drastically than pilaf because she's a human. Her prefrontal cortex was brought back to that of a child, therefore her memories as an adult were wiped out or suppressed into her subconscious. It would explain why she behaves still as a teenager when she meets trunks because of all the hormonal changes, but still follows her old life path since she still has some repressed memories driving her. I dont think toriyama thought of this, but it satisfies my head canon.

I had to look this up because the second i saw her and Trunks have a thing going on i got really confused. Because i've seen only the TV shows. And then i got to Super and all of a sudden she seemed so small. I tought it was simply a design choice or what ever. But nope... She all of a sudden has a thing with Trunks and i was like... What?
