The simple way of thinking about it is that rolling shutter captures the image as a stream from top to bottom. This takes a little bit of time (measure in milliseconds but still time), so by the time the capture is complete on that frame, the subject may have moved slightly. Global shutter captures the entire image at once, so everything in the frame is from the same moment in time. The practical upshot of this, is that with a rolling shutter, you can get the jelly wobble effect if the camera is moving back and forth. Straight lines aren't straight and movement is a bit off. That sort of thing can often be done using PowerMesh to do the multi-planar warp. Remember to add in track mattes to cut out the moving elements.
