For those not dextrous enough like Michael, or who aren't neat and patient, I recommend a "lattice pastry cutter" which can be used for most types of pastry. After rolling the cutter over the pastry, the pastry can be drawn (spread) out to form a lattice pattern, it's almost like magic. Pastry circles can be quickly stamped out and placed over the tartlets for a quick decorative covering. This cheat's method is quicker and easier, but it does make it look slightly commercial (i.e. factory-made). (I've used it for small mince tarts and it works beautifully, as well as larger pies too. Lazy / busy person's quick and easy alternative).
BTW, love the second lattice pattern. thanks.... I've been making my own puff like a pro...hehehe.... thanks to you. I think I will skip the confec sugar glaze.

Custard powder is available everywhere. If you still can't find it, I already stated in the description how you can replace custard powder. Good luck and success.

I dont know how buffalo butter should taste and smell like, but with cow butter this recipe taste and smell wonderful. Perhaps, you could try it out and tell us about your experiment, or you could google it for more information. Good luck and success to you.
