For cutting with a curve there is a very handy command - Solid Tools - Wire Cut. Just one command instead of Solid - Extrude planar curve and Solid - Boolean Difference. Has options to delete one of the parts after cut or keep both. If you keep both parts it is like using Surface - Extrude Curve straight and then Solid Tools- Boolean Split.

I miss the videos that arent related to SubD because I cant download the rhino new version:(
if you are using old version like Rhino 5 for example. you may still search for T-Spline plugin from Autodesk. they are similar.
