Memories!! My Grenadian grandmother was a master of the coalpot in conjunction with a pressure cooker. Somehow when you say cow tongue and talking about dumplings I get the feeling it is a large piece of glutinous dough with a karate chop down the middle. That thing was so dense and chewy it would pull the fillings out of your teeth if you had them! One of the few things my granny cooked that I did not eat but there was a lighter corn meal version that I would. She used a patois word and was something like blogo. It is only recently that I realized the reason my granny's food tasted different (better) was due to the wok-hei from her coalpot and four burner kerosene stove. I can see the Indian man Ole delivering coals on his donkey cart on Grave Street, Chaguanas like it is in 4K right now....Memories!
Chris I have my parents coal pot, it’s about 60 yrs old and we use it whenever we’re making bbq. Ole school dhal dumplings is not my favorite because it reminds me of very lean times growing up. However, this version I can enjoy. Thanks for the memories.

to be honest, dhal is a dish and not a particular pea.. but different types of peas are used in making dhal. In Trinidad and Tobago where I originate, the word dhal, usually refers to yellow split peas
dhal/dal is Hindi for lentils/split peas/split beans (specifically refers to split legumes but english has several names for the sub categories), so long story long yes to both. I’d guess each Caribbean country has a preference for which bean or pea they use based on what’s local to them.

Great video, but you will damage the enamel lining of the pot with a metal spoon. You can use wooden or plastic spoons when cooking in those pots

the coconut milk add the rich creamy flavor. may I suggest stock and finish with butter or a bit of heavy cream
