    Penicillin is probably one of the best cocktail ever created and that I ever tasted. Sam Ross has created so many cocktails but this is above others. It's interesting how many cocktails created under Sasha Petraske's supervision have honey in it, just to mention the Gold Rush and this one.

      I've also heard some references to Glasgow Blend Compass Box, but I am uncertain if it was the float or the main ingredient.

    The Penicillin is a great cocktail. Although I used a Monkey Shoulder. I used the Laphroig 10 to float. I never thought about using an atomizer. That is a good idea!!

    Sam Ross is a legend!
    Before I knew anything about Milk & Honey, I was at a shop and found Sasha Petraske's book and was flipping through it and had to buy it since I was snapping pictures of so many of the recipes, many of them from Sam who I knew because of my love of his Paper Plane cocktail. That book is fantastic and exposed me to some great Sam Ross recipes such as the Cynar-forward 'Too Soon' and introduced me to the Ross Ratio for sours 2 : 3/4 : 3/4, which I'm surprised took me ~2 years of amateur at-home cocktail making to discover. The book led me to Sam's app 'Bartender's Choice' which, while having a somewhat clunky UI, is filled with sooo many solid recipes that it has become one of my go to resources now. There are drinks where I prefer other specs than the app includes, such as the 'Sidecar' (& family like White Lady) where ironically I prefer specs closer to the Ross Ratio that I cross referenced from PDT & Serious Eats: 2 : 3/4 : 3/4 : 1/4 (simple or demerara syrup), or the 'Tipperary' where I use 'Little Italy'-esque specs from Imbibe: 2 : 3/4 : 1/2. Regardless, Sam is my favorite bartender and I love his and Milk & Honey's style of building recipes up from solid template-based foundations that makes them classic, memorable, delicious!

    question re. honey syrup... I've seen the educated barfly recipe (3:1 honey:water) and just wondering if this is the same ratio the penicillin employs... have seen other honey syrup recipes using 2:1 and 1:1 ratio; thx for any/all guidance/these videos are amazing!!

    If anyone has a peated Kilchoman (Loch Gorm comes to my mind) I suggest to try it has a float in plae of Laphroaig. The reason I am saying is that Kilchoman has also a salty component which I think it will add a furhter dimension to this already amazing cocktail.

    As of late, I've been making mine with Monkey Shoulder as the base and Lagavulin 16 for the float, and it's been delicious. I'm using a homemade Ginger Syrup that is quite bold in flavor and fresh homemade candied ginger for the garnish. One of my favorites for sure.

    Love this scotch sour! First time I made it, I used Compass Box Artist’s Blend for the main spirit and Bruichladdich Port Charlotte for the float. Gotta say, I am predisposed to like Sam Ross creations and love The Paper Plane and The Wry Grin too. Thanks, Leandro, for the nifty bamboo toothpick “garnish clamp.”

    I love Penicillin, I thought of doing a tequila variation and would have called it Paracetamol a very prevalent medicine prescribed in Latin America, but I learned in the comments that is already invented and it's called Medicina Latina

    Absolutely love this drink. My standard mixing scotch is Johnny black, and it works well here. Float is usually whatever Ardbeg or Talisker I am drinking at the time - tonight it’s the Wee Beastie.
    I like the atomiser idea.

    I’m pretty sure the original recipe used a Lagavulin 16 and when I was last at Attaboy in December I ordered one for my girlfriend and if I recall correctly it’s what they’re using there now. Also, I believe they use ginger infused honey syrup (this is what I’ve used at home too).

      @@Soulrapier1 one can have allergy to pretty much anything, from specific type of food to sunlight. It is an immune system mailfunction. At least I'm somewhat lucky, I'll get itchy as hell, eyes swollen and so on but I won't die. My mom whom I inherited it from gets angioedema so strong she cannot breathe.

    All these Leandro emote thumbnails have given me an idea for a t-shirt. A Bob Ross themed shirt with Leandro putting a garnish on a cocktail "Happy Little Garnishes" Do it in a watercolor style and maybe have the cocktail on a canvas with Leandro "painting" the garnish onto the cocktail.

      This one is an out of production Libbey glass that I found a whole bunch of in a store. Because it’s unavailable and the response we got is so huge we’re looking into possibly have some made with a similar design

    I remember the first time I had Laphroaig 10, my brother bought it for me as a birthday gift. I hated it, but knew it was expensive so I kept trying it… like once a week I’d pour a finger of it and sip on it. By the time I finished the bottle I was hooked. It’s now my favorite spirit. Any cocktail featuring an Islay scotch, immediately shoots to the top of my list.

      @@LemonMeIon I’m still working on acquiring a taste for Campari. I’ll get there, but I’m not they’re yet. When I make Negronis, I can’t do equal parts yet. I do 1-1/2 oz gin, 3/4 oz Campari, 3/4 oz sweet vermouth.
      If you’re looking to get a peaty scotch, but don’t wanna break the bank, I’d recommend Ardbeg Wee Beastie 5 Year Old. It’s nice and peaty but costs less than Laphroaig 10.

      @@BluesmaNeedham Thanks for the recommendation! Negroni is very sweet and medicinal so like you I do the same ratio as Boulevardier and even sometimes decrease the vermouth because I like drier cocktails.
      I think sours like Jungle Bird (with Appleton) or Bitter Mai Thai are better introductions to Campari. Or maybe add a half ounce to a glass of lemonade.

    Would it work just as well with Black Label and Lagavulin ? I once saw a bartender use a lightly aftertaste smoky scotch like Highland Park instead of using two whiskies. Unfortunately I couldn't taste that whiskey. Perhaps you could give it a try.

    In Regarding Cocktails it is mentioned simply as the super-smoky Peat Monster Scotch. In a quote from Sam Ross he says he was playing with the recently delivered line of Compass Box Scotch whiskies, so probably same brand.

    I made it following the recipe exactly, and found the lemon to overwhelm nearly everything. The ginger disappeared. I did get the peatiness on the nose. It was so acidic I got a stomach ache. Am I doing something wrong here? I don’t get it.

      @@jw-tu9ck your honey syrup 1:1 ratio isn’t going to stand up to the lemon try taking 1 Cup rough cut ginger, 1 cup hot water and 1 cup sugar put into a blender, blend til smooth then strain through a nut milk bag or the like, you’ll get a much better result I suspect

    I make a hack with the syrup and do a 3-1 honey combined with Ginger then I sit 3 crushed Cinnamon sticks because some recipes call for Cinnamon syrup. Super Tasty

    I've tried this with an atomiser but I felt the smoky flavour died too quickly. It was great off the first taste but by the end it was barely noticable. I moved back to my usual two barspoons over the top. I guess it depends on how much you like Islay whisky.

    Atomizer is not necessary. Monkey Shoulder for the base sour and a 1/2 ounce float of Caol Ila 12 is my preferred Penicillin recipe.

    Hmm. I didn't think scotch could be used in any mixed drink. I thought it was to be enjoyed neat or on the rocks.

    I make mine with Monkey shoulder and float with lagavulin offermans edition. Also I am against this modern way of using an atomizer to make the float. I use a spoon so i get a good float layer.
