  • Otah-Otah (or simply known as Otah or alternative spelling as otak-otak or 乌达 in Chinese) is a Nyonya (could be Malay too) dish commonly found in countries across Southeast Asia, especially in Singapore, Indonesia and Malaysia. This spicy grilled fish cake is a mix of ground fish meat and spices. Traditionally served fresh, wrapped inside a banana leaf or coconut leaf, otah can be eaten on its own as a snack or with rice as part of a meal.

    The food processor we used in the video is under the brand Magimix. If you like to buy them, you can go to any of the major departmental stores in Singapore such as Isetan, Robinsons, Takashimaya, BHG, OG, Metro or Tangs. This brand is also available in most major departmental stores in Malaysia.

    Ingredients:
    Makes 10 pieces
    300g of mackerel or any white fish w/ little bones
    100g of shallots
    4 cloves of garlic
    10 pcs of dried chilli - deseeded & hydrated
    2 pcs of red chilli - deseeded
    20g of galangal (aka blue ginger)
    2 stalks of lemongrass (use only the white part)
    8 pcs of kaffir lime leaves
    15g of dry roasted belachan
    1 teaspoon of turmeric powder
    1 tablespoon of curry powder
    1 teaspoon of sugar
    1.5 teaspoons of salt
    2 egg white
    1 teaspoon of cornflour
    1 tablespoon of rice flour
    250ml of coconut milk
    Some banana leaves
    A few toothpicks
    Bake at 200 degree Celcius for 20 mins (10 mins on each side)

    thank you for this otak recipe..just made it..love it..my boss say so yummy...even i did some adjustment...we dont have belachan..so i used dried shirmp not the dried prawn..and add fish sauce and more salt..also i used milk fish..and i have only 200ml of coconut milk..but the result...sooo good..

    Im pretty sure it will taste great... thx for these video ..when i make mackarel fish paste for yong tofu im didnt blended it with food processor .. after extracting the fish meat im just add some water , pepper , salt and starcher then gaul gaul by hand only to make the paste very texture then blended fish paste if only tenggiri fish

    Hi Roland I tried your recipe and it was delicious! But my otah turned out a little too wet. What would your recommend to make it firmer and drier? I steamed the batter in a saladmaster pan. Perhaps if I baked it in the oven? Would appreciate any advice from you thank you

      Im tried muar otak otak that got add on 4-5 tiny sea prawn without blended it .. also great taste because additional whole tiny prawn teksture.. if blended prawn together maybe fish and prawn taste gone...

    If you want to taste the fish meat, i suggest putting half in the otak paste when blending and the other half just stir into the paste. This is a nonya otak2 recipe

    Brilliant. Never knew we could make this ourselves without charcoal stove. Btw is it possible to substitute coconut milk with something else to make it healthier? Honestly I'm surprised that other than the coconut milk, otak is actually pretty healthy.

      Hi Jessica sis. One of our friends on TH-cam shared that he used catfish to blend and then add batang fish to the paste so that the fish bits can be tasted. Yes you’re right. I’m general, any white meat fish will do - those with lesser bones will be much easier to handle. 👍🏻👍🏻

      Hi Cheng Jun. So sorry for our late reply. It depends on how big chunk your otah is. You can try 15 mins first then check to see the done-ness then gauge how long more you need by estimation. Hope this helps.

    How do u managed to de-fillet the fish so nicely? I have tried but don't get such nice fillet. Is always in a mess:) Btw, is the final result salty cause I notice u also add salt in addition to belacan which is generally very very salty.

    I prefer to see pieces of fish meat in my otah, the ingredients that I use is more or less similar.I use cheaper fish meat i.e. the Vietnamese cat fish fillets for the blend and the more expensive batang pieces mixed with the paste before grilling :)

      Doesn't vietnamese cat fish have a very bad mud taste? How do you get rid of it?

      If frozen fillets, thaw then soak in buttermilk or DIY buttermilk ..1 cup milk with 1 tbs white vinegar ..soak thawed fillets for 15 to 30 mins. do give it a try

      Hi Mary. Thank you so much for watching our video. We don’t have a video specially to make fish paste but we have one where we made fishballs.       Hi Audrey, you can omit red chilli and reduce the amount of red chilli used but actually this recipe is not very spicy.

    You had missed out an important ingredient for nonya otak otak is CANDLENUT. You can also coarsely chop the fish separately from the paste and add the fish when placing on the banana leaf. This way you can get to taste the fishmeat better.

      Nice! But this recipe is still good without candlenut. The purpose of adding candlenut is to add some thickness to the mixture. This job is also fulfilled by coconut milk which can help to add a very flavourful aroma to this recipe. Happy cooking!

      Spice N' Pans You are right. Candlenut if used can omit both the flour. As the latter tends to make the otak meat tougher than the former

    May i ask how long u stir the ingredient, after i stir i still can taste inside otak got granule of chilly .

      Hihi. We stir fried the chilli for about 30 mins. If you have bits of chilli, maybe you wanna blend the paste longer to break it up more. Hope this helps.
