Hi everyone, just want to say I am so grateful for this community. I was able to interview today with a great company and I have a work demo on Monday before I can start my probationary period for the next 3 months and I’m feeling great today. I wanted to share my joy! Dealing with a career change is scary but I’m so glad I have the opportunity.

I smiled when your mom was telling you about sliding cake layers. When I was 6, my brother was having his 9th birthday and he had asked for my mother's devil's food cake with caramel icing. It was her specialty and it always went off without a hitch, but not this time. I think she was in a hurry and the cake was still slightly warm. The top layer started to slide and she pushed it back into place and stuck some toothpicks in to hold it in place until she could get it cooled enough in the fridge so it wouldn't slide. Somehow, one edge of the cake stayed put and it slid again, just slightly so there was a void between the hunk stuck in place and the rest. Just then my brother walked in, took one look, and in typical 9 yr old boy fashion, said, "Cool, Mom! You made a cake with a handle!" Sixty years later, we still talk about the "handle cake"! ❤

Becky, for many years I was a professional Baker and Caterer. The cake you said didn’t come out the way you had hoped it would, simply make a lemon simple syrup and douse the layers well then make one of the cheesecake layers that you’ve made before to go between the two lemon layers. You can use raspberry between the layers if you wish but with the simple syrup you probably won’t need to. However you can decorate the top of the cake with cream cheese icing with fresh raspberries and thinly sliced twisted lemon slices.🍋🍰❤

For my Easter meal a neighbor brought over plates of food for my husband and I. He’s bedridden and has dementia and didn’t even know it was Easter Sunday. It was very sweet of my neighbor to bring us dinner otherwise we probably would’ve just had cereal 😂😂😂😂 When we celebrated Easter dinner with my side of the family we would have ham, sliced potatoes cooked in butter with onions baked in the oven, baked beans, sometimes potato salad, deviled eggs and “green stuff”. 😂😂😂 the green stuff was a gelatin salad- lime jello, applesauce and ginger ale. Put the lime jello in with the applesauce in saucepan until the jello dissolves add ginger ale (can’t remember how much but a little less than the amount of water that would have been used). Put in jello mold or dish you will use to serve and refrigerate. It’s sweet but has a little zing to it. Goes great with ham

Tip for cake stacking when using a jam filling: put a very thin layer of frosting on the top of each cake layer before piping your boarder & adding the jam. Then, after stacking your cake layers, refrigerate it for at least 30 minutes (or freeze for 10-15 minutes before adding the remaining frosting & decorating. This will help stabilize the cake & keep it from leaning.
I smiled when I saw the pickles. We always had a pickle dish on our table. It had pickled beets, pickled onions and several kinds of cucumber pickles. My grandmother always had that on her table for nice dinners and so does my mom. My sister is the one who LOVES them so she will get the pickle plate!

Becky, I made the Cheesy Potatoes yesterday and found an easier way to mix them. Mix all the ingredients together and then add the frozen potatoes last. Game changer!!!

Having both my children living out of state and having lost both my parents several years ago I usually fix special holiday meals with my friends, I kept the meal small this year, just ham sweet potatoes with pecan topping and asparagus, no bunny cake this year, I have the original bunny cake recipe from an old magazine, I have made the bunny cake since I was in my twenty's I am 77 years young, gave 6 grandson's so will show the boys how to make bunny cake. Becky i read the recipe that is at the persons site that made the lemon poppy seed cake, it does have baking piwder and baking soda in the recipe. You said in your video it only has 1/4 tsp. Baking soda and no baking powder. Could be why the cakes did not rise very much as well as creamung the butter and sugar, then adding one egg at a time.

Where to begin? I am just going to go down the list of my notes as there were so many things to comment upon. I love your parents and your loving relationship with them. I also love when you cook with your mum. I appreciate the cooking lessons when you CALMLY adapt from a cooking error and are able to resurrect the “error” into something edible. Also, I have learned not to angst about not having on hand or being able to access a particular ingredient. You just forge ahead and use something you have in your larder that may even make the recipe better. What a stress reliever! I also appreciate the way you and your mum make a military strategy approach to your HUGE family dinners. The list. The order of prep. The way the two of you (also when you are alone) are able to work in the kitchen in tandem (or solitarily when you are alone at home) so that the prep, use of dishes and oven/stove time, and even organizing what you can do a day ahead are well in hand. What I am concerned about, though, is the cost. Surely the two of you who do the bulk of the dishes do not carry the cost on your own. It is nice that people bring a dessert or a side dish but usually the two of you bear the cost of the main meal and at the cost of food these days … ! Not meaning to be a mean miser but … ! And finally, I hope that your family appreciates the massive effort that you and your mum and dad put into this gargantuan effort. You are rock stars! Oh! I forgot to mention the bunny cake that you mum said she just “put together” the night before. Good grief! 🐇🐇🐇💋💋💋

In Australia we eat hot-cross-buns from Good Friday breakfast until they are gone. Traditionally they have sultanas/raisins, spices and candied citrus peel. As they are widely available in all bake houses they now come in all sorts of flavours, (choc-chip, no fruit, apple and cinnamon etc). I’ve never heard of anyone serving them as an accompaniment to a dinner. Usually breakfast or afternoon tea but we don’t serve sweet bread with savoury meals. A really wonderful alternative to hot X buns is Russian Easter bread (Kulich) spread with fancy cream cheese (Paskha). There are recipes for these goodies on Pinterest and the internet. I have never seen or heard of serving a hot cross buns with a meal. But I am also an Aussie. But I love using this hot cross buns recipe from Nagi who also is an Aussie too. 🇦🇺🐺🦘🐨
Fun watching you and your Mom cooking together and the rabbit cake brings back memories of my daughter's birthday cake when she was little. When you showed your Mom's list I saw where your organizational skills came from. I once made a frozen black forest cake for a Christmas brunch. It involved chocolate cake layers and ice cream layers with cherry pie filling in between each section and then the whole thing was frosted with whipped cream and decorated with chocolate curls. My mistake was not making sure the pie filling was super cold before I assembled the cake and when I went to the freezer to take it out the top two layers had slid off and were sitting next to the cake. Fortunately it landed on a plastic container next to the cake so it was actually flat and clean. I grabbed one of the fellows, handed him a large lifter and swore him to secrecy. Between the two of us we lifted the layers back on, I fixed the cream and when it was cut nobody really could tell what had happened. It was either that or no dessert for twenty people.
Happy Easter! One thing I heard a while ago: cooking is an art, baking is a science. Also, I've decorated cakes for over 25 years Cakes are much better being frosted the day before. The frosting has time to set and the cake is very moist. If your frosting starts to get air bubbles from the frozen cake thawing, poke your frozen cake with a toothpick before frosting. Everything looked great!❤
It takes like minds to work well in the kitchen together. You and your Mom are both very organized and clean, and that makes you a team. My daughter Is not a cleaner and leaves everything a mess, and will tell me I'm a controller for trying to stay organized. It is nice to see a mother and daughter who get along.

Having both my children living out of state and having lost both my parents several years ago I usually fix special holiday meals with my friends, I kept the meal small this year, just ham sweet potatoes with pecan topping and asparagus, no bunny cake this year, I have the original bunny cake recipe from an old magazine, I have made the bunny cake since I was in my twenty's I am 77 years young, gave 6 grandson's so will show the boys how to make bunny cake. Glad you had a great Easter 🐣

Oh I want to tell you that I'm going to definitely try this cake. It's my favorite.
Becky i read the recipe that is at the persons site that made the lemon poppy seed cake, it does have baking piwder and baking soda in the recipe. You said in your video it only has 1/4 tsp. Baking soda and no baking powder. Could be why the cakes did not rise very much as well as creamung the butter and sugar, then adding one egg at a time.

Where to begin? I am just going to go down the list of my notes as there were so many things to comment upon. I love your parents and your loving relationship with them. I also love when you cook with your mum. I appreciate the cooking lessons when you CALMLY adapt from a cooking error and are able to resurrect the “error” into something edible. Also, I have learned not to angst about not having on hand or being able to access a particular ingredient. You just forge ahead and use something you have in your larder that may even make the recipe better. What a stress reliever!
I also appreciate the way you and your mum make a military strategy approach to your HUGE family dinners. The list. The order of prep. The way the two of you (also when you are alone) are able to work in the kitchen in tandem (or solitarily when you are alone at home) so that the prep, use of dishes and oven/stove time, and even organizing what you can do a day ahead are well in hand. What I am concerned about, though, is the cost. Surely the two of you who do the bulk of the dishes do not carry the cost on your own. It is nice that people bring a dessert or a side dish but usually the two of you bear the cost of the main meal and at the cost of food these days … ! Not meaning to be a mean miser but … ! And finally, I hope that your family appreciates the massive effort that you and your mum and dad put into this gargantuan effort. You are rock stars! Oh! I forgot to mention the bunny cake that you mum said she just “put together” the night before. Good grief! 🐇🐇🐇💋💋💋

In Australia we eat hot-cross-buns from Good Friday breakfast until they are gone. Traditionally they have sultanas/raisins, spices and candied citrus peel. As they are widely available in all bake houses they now come in all sorts of flavours, (choc-chip, no fruit, apple and cinnamon etc). I’ve never heard of anyone serving them as an accompaniment to a dinner. Usually breakfast or afternoon tea but we don’t serve sweet bread with savoury meals.
A really wonderful alternative to hot X buns is Russian Easter bread (Kulich) spread with fancy cream cheese (Paskha). There are recipes for these goodies on Pinterest and the internet.

Fun watching you and your Mom cooking together and the rabbit cake brings back memories of my daughter's birthday cake when she was little. When you showed your Mom's list I saw where your organizational skills came from. I once made a frozen black forest cake for a Christmas brunch. It involved chocolate cake layers and ice cream layers with cherry pie filling in between each section and then the whole thing was frosted with whipped cream and decorated with chocolate curls. My mistake was not making sure the pie filling was super cold before I assembled the cake and when I went to the freezer to take it out the top two layers had slid off and were sitting next to the cake. Fortunately it landed on a plastic container next to the cake so it was actually flat and clean. I grabbed one of the fellows, handed him a large lifter and swore him to secrecy. Between the two of us we lifted the layers back on, I fixed the cream and when it was cut nobody really could tell what had happened. It was either that or no dessert for twenty people.
Here in Utah we call them funeral potatoes because it's what you bring to the funeral. We absolutely love them.

Happy Easter! One thing I heard a while ago: cooking is an art, baking is a science.
Also, I've decorated cakes for over 25 years Cakes are much better being frosted the day before. The frosting has time to set and the cake is very moist. If your frosting starts to get air bubbles from the frozen cake thawing, poke your frozen cake with a toothpick before frosting.

My daughter Is not a cleaner and leaves everything a mess, and will tell me I'm a controller for trying to stay organized. It is nice to see a mother and daughter who get along.
