hi Joyce, 放肉類入冷水蓋過, 可加入少量的鹽在水中，然後以細火開始加熱。 過程中，肉品內部的雜質與血水就會慢慢擴散到水中。
燙至肉的表面變熟時，水面會有一層雜質浮沫，把浮沫撇去，再把肉撈出洗淨. 煲湯嘅肉會"淋啲"唔會死實實.
煲湯還剩下半小時後才落髮菜。其實髮菜落半包便可，用多，因為會發漲少許。
至於豉大概十、十二粒便夠，想佢香可落油吓佢。
煲湯亦可加雞腳，大概六、七隻便夠，但要飛水。
髮茶浸一浸佢，沖洗乾淨過吓水便可。
鸭賢飛水，盡量剪為一舊舊煲，等煲湯能夠入味，鸭賢其實兩個便夠，用太多。
煲汤大概煲二個半鐘便可
緊記雞腳還剩下一個鐘才放！
