Is your pork shoulder trimmed? When I make my breakfast sausage I use untrimmed (well, packer trimmed) shoulder and it's plenty fatty. You did a good job with the "little" sausage stuffer -- it's tricky to keep even tension.

Thanks! When I got the pork shoulder, I didn't trim it but it seemed reasonably pre-trimmed.
