I have lived in the US, Indonesia, Sweden, and now Germany. I have also worked in Denmark, Norway, and Malaysia. Everywhere I have gone, I have learned what I can about the cooking.
Each video covers the dish, how it fits into the cuisine, various approaches to making it, and variations. Sometimes the video may show a larger amount than the recipe as recipes can be scaled up in order to have left overs.

Lithuanian Pickled Mushrooms
his started out as a delightful way of pickling wild mushrooms (boletes, chantrelles, etc) but can be done with button mushrooms etc as well. The resulting mushrooms are refreshingly tart but not too tart, and they are a great side dish.

Recipe (serves 6-8, but keeps well uncanned in the fridge for a few weeks or canned for a year):

1 kg mushrooms
200ml (3/4 cup) water
75ml (1/4 cup plus 1T)
1/2 T peppercorns (optional, only if you like them peppery)
1/2 T ground black pepper
1/2 T coriander seeds
4 cloves of garlic
1 1/2 T salt
50 g (1/4 cup) sugar
2 bay leaves
Add the water, vinegar, salt, sugar, and spices to a pot and bring briefly to a low simmer before removing from the heat. and covering.
Then I wash the mushrooms if they are wild.
Boil the mushrooms with enough water for 10 minutes. Strain and gently press out any extra water.
Add the mushrooms to the brine. Bring to a boil.
Simmer for 5-7 minutes.
Then can or cool and set in jars (for a shorter storage).

Thank you for the walk down memory lane. My Mom and Nanny would make this on special occasions. We always put the bacon and onion with the grated potato and then baked as one big sausage. I don’t think we had any left over to fry the next day. Your recipe looks delicious! Enjoy. 😊

The National pizza is kebab pizza. Again Italians are weeping.

Nah, not traditional Swedish. Though I did have an amazing pineapple and prawn pizza in Landskrona, Sweden!
One thing it needs is to be flipped over for even cooking! Then it'll be really YUM!😋😋😋

if we hadn't liked the banana on the pizza, we wouldn't have eaten it. but a little more color on the top, I think the bananas will be a little sweeter if they get a little color.

Yeah. The potato amount isn't big enough to justify grabbing a river sp I just used the garlic press.

Though not all bowls of food with broth are considered soto though. Mie ayam for example.

@@trleith As far as I can tell, there are three sort of related but distinct genres: soto, sop, and mie. Mie is the easiest to differentiate. This is a noodle bowl with some other things. The noodles are the primary center of the dish. Broth is usually served on the side. Sop applies to a variety of soups including all Western soups. And then there is soto. Dividing between sop and soto is pretty hard. Both include broth and both have some sort of meat of other protein. Soto broths are usually more richly spiced and may contain coconut milk. Sotos also generally have some sort of a traditional carbohydrate in them, such as rice noodles, noodles, or rice cakes. The general assumption is that soto recipes are a distinctly Indonesian genre with influence from other Asian cultures mostly. If I had to differentiate I would say that for sop, meat is the centerpiece of the broth but for soto, spices are. That's the best I can say though.

Is your pork shoulder trimmed? When I make my breakfast sausage I use untrimmed (well, packer trimmed) shoulder and it's plenty fatty. You did a good job with the "little" sausage stuffer -- it's tricky to keep even tension.
