The best Smoked Barbacoa you will ever eat - Old Country Gen 2 Smoker

Today we are smoking up a chuck roast on the Old Country Gen 2 smoker to make some delicious tacos. This offset smoker held temps beautifully and used little wood to make this cook. I cooked this chuck roast at 275 starting with mesquite lump and finished off with splits of hickory.
Salt, Pepper, Garlic and Onion rub:
2 tbsp of course kosher salt
2 tbsp of course black pepper
1 tbsp garlic powder
1 tbsp onion powder
Spritz mixture:
1 cup of beef broth
1/4 cup of white distilled vinegar
remainder to 2 cups of water
Finishing the barbacoa
1/3 of a 3.5oz Achiote paste - Chef Merito’s Achiote paste - amzn.to/3SsVeev
2 tbsp of white distilled vinegar
1/4 cup of beef broth
Mix well and add to shredded beef.
Place back on for 5 - 10 minutes.

Achiote paste is a great finishing touch. Gonna have to give this a try soon.
Hank, I actually spoke to my local meat market. They use achiote paste, vinegar and salt to marinate some meats they sell. I got all the info on a few meats they sell, they use basic seasonings. Which surprised me, but they are good. So ill be showing some of those recipes in the future. This recipe was just my twist, but inspired by what they told me. That meat was liked by everyone that ate it, I know I seasoned with salt to my taste but it balanced out in a taco for others. Thanks Brotha!

I meant to add, I am a huge fan of Chef Merito’s Chicken Seasoning & the Carne Asada seasoning.
I marinate Tri-Tip with the Chef Merito Carne Asada seasoning and an entire large can of pickled jalapenos - juice and all.
Low and slow, indirect and slice thin against the grain. Perfection!
My local meat market uses it on their meats. I have a few videos coming on how they prep and marinate their meats. It really is delicious stuff.
That smoker is nice. Just got an Oaklahoma Joe's offset myself. But yours has a nice larger firebox chamber door, which is nice. I also like the double level cooking area. Seems well built, too. But @ $1800. Yikes!
No cumin or oregano? Seems like it needs more spices..
You could if you wanted to, the achiote paste gave it enough added spices to it. Trust me, there was nothing lacking on this meat.
Good video. Try using beef cheeks if you're feeling froggy. They're tough as nails, but if you cook the dog shit out of them all that connective tissue turns into lip smacking, sticky collagen.
