I have Portobello caps so I'll be stuffing those as well. I almost always change things up according to what's on hand and our dietary needs and I think you're very gracious to encourage that. These are little shortcut masala dosas, but with sweet potatoes! Yay! Thank you for a new recipe. It’s perfect for days when I haven’t been to the store and am too tired to think of a complicated dish to make. It’s interesting that you use yellow mustard seeds here, since most Indian recipes only use black mustard seeds. I like both, so I’ll try your exact recipe first. Thanks again for your creativity.

@@WeCookVegan I made these for dinner last night, as my husband wasn’t feeling well. They were so good! My husband isn’t a vegetarian, but he loved them all the same, and did my son. I really liked how nicely the sweet potato went with the spices, and it was an easy recipe to make, which is an added bonus. I love masala dosas, but some dosa “pancake” batters are kind of complicated to make and you need to soak, grind, and then ferment dal and rice. I make them from rice flour or millet flour or I cheat completely and buy the packaged dosa mix. It works. The best part of masala dosas, in my opinion, is the potato filling. It’s so delicious, and the spices you use here remind me of that. I’m not Indian so I cannot claim to know anything about authenticity, but I love the Indian spices mixed with onion and potatoes. If you would like to make the filling, I recommend the HebbarsKitchen recipe. She’s got a treasure trove full of vegetarian Indian recipes, but she does use a lot of dairy. I think if you search for aloo bhaji you’ll find a bunch of good ideas. Have a lovely weekend!
