    Chef John I tried this recipe and it is delicious. I’m from Louisiana and this recipe, if it isn’t Antoine’s, is close--very, very close.
    Watercress has been rumored to be the ‘secret’ green in Antoine’s recipe, for years. Yet when you peruse the many dozens of versions of OR, few contain watercress. Also, not many have got the herbed butter part down, either.
    So I think it’s possible that you do indeed “know a guy....”!

    OMG. My wife and I had some Oyster Rockefeller in Florida about 20 years ago and never had any like it since. They were the best we ever had and I now think that this is it. Not spinach like everyone else uses. Time to give this a try. Thank you Chef John. I have got so many great recipes from you
    I think the one I had was finished with some parmesan, bacon crumb and bread crumb before hitting with torch

    The original recipe from Antoine’s includes watercress and capers. Capers make a difference. Absinthe was the original liquor Pernod or Herbsant we’re substituted when Absinthe became illegal. (Now it’s legal again.) The rock salt is a useful presentation, but it also imitates the crushed ice that raw oysters were served on.

      Capers are a standout in a lot Antoine’s dishes and are a major ingredient that makes the sauce green. Their herbal/nutty flavor after the vinegar cooks off I’ll transform any other recipe you try.

    This looks wonderful. I've had unfortunately on more than one occasion, some bad oysters Rockefeller. The chef paid way too much attention to the topping. I love Chef John. Hope I like this one.. Maybe I'll serve it with his Lobster bisque.. Hello!!

    Chef John is absolutely right. The authentic Oyster Rockefeller ( en.wikipedia.org/wiki/Oysters_Rockefeller ) does NOT contain spinach in its topping. I bet that the topping works very well with escargots ( en.wikipedia.org/wiki/Escargot ) too.

    ~ Still haven't come across a video with Chef John in front of the camera- but oh, the yummy dishes we've been enjoying from his cooking videos! I'd imagine if/when I do see Chef John- my ears and taste buds will be the only thing my eyes will 'see' ;D ... And I do, so very much, agree- "he does have some great recipes" :-]

    Did you know that the side at which the adductor muscle exists, determines if the oyster is left or right handed? :-D

    Here in New Orleans we have another liqueur that is very similar to Pernod. Its called Herbsaint and it's great...not quite as strong as Pernod. I prefer it but it's sometimes hard to find outside of New Orleans.

    Keep your oyster shells and run them through the dishwasher. You can then reuse them with pre-shucked oysters.

    I know it's sacreligiois, but I bake my Oyster Rockefeller on toasted bagette slices instead of in the shell. I pinch some of the bread out of each thick slice before toasting it lightly under the broiler. That makes a depression to hold the oyster. Then I lay the oyster and butter on the slice. After it comes out of the hot over I eat the whole thing. Not authentic but quite tasty.

    Wonderful! Your Filipino-style adobo came out great here -- using duck legs was inspiration on your part! There's a chance Santa might bring me a box of oysters. I learned how to open 'em, and if I can wrench a few of the raw ones away from the spouse, ha ha ha! Now I know a way to cook 'em! Thank you so much. Uprated.

    Don't be tempted to take a sip of Pernod or else you'll have the flavour in your mouth for the rest of the day. It's strong.

      Yup. Dilute it 5 very cold water to 1. (Actually I prefer it even weaker) perfect on a hot summer's day.

      I did shots of Pernod while slurping fresh oysters one Christmas. When I woke up, I felt like I had been drinking scope all night. Apparently that's not how my breath smelled, though.

    In NahlinsDahlin they use Herbsaint. Absinthe is legal now, but way expensive.

    ~ So, I have to scratch my reply from yesterday- or rather, a portion of it. Evidently, I HAVE seen Chef John in one of his videos! And, as I predicted, I must have been using only my ears and taste buds while viewing it ... which is odd because it wasn't even a cooking video- it was his 500th video, and it was a tutorial on how to make a potato ball in a 'box'!     @Craig Levorsen is absolutely right, by the way, guys 'n' girlz! You're better off using Ouzo if you can't get hold of Pernod. Absinthe isn't just more expensive, but I feel that it's far harsher than Pernod, and doesn't have as much of an aniseed kick.

I've only ever seen Chef Johns hands & his profile pic on here- he looks quite dapper, if you ask me :) It was an honest/fun compliment. I'm a new fan, and my family & I have already prepared quite a few of his recipes, AND, they're so freakishly delicious- I've added extra laps to my jogging/extra turns on Wii Dance because I'm so freakishly addicted to his cooking :P Again, sorry if I came across as sarcastic.

    I'm guessing the original recipe used absinthe and was changed to Pernod when absinthe became unavailable in the states.
