I also prefer single holders, and my primary Peace Dollar collection is in single coin slabs. However, I also like doubling up as well. That said, you are absolutely correct - the two coin holders will likely be harder to sell.
Another disadvantage is that they both could receive different grades. Like one a 69 and the other a 70. That could hurt your resale value because most people wouldn't want that. Most people collect 70s on those.
Yes, double 70s would be best for re-sale if both coins are current moderns. The grade symmetry issue is a bit less of a re-sale concern when pairing two coins that are 100 years apart. A MS63 1921 Peace and MS69 2021 Peace is not quite as off-putting as a MS69 2024 Peace and a PR70 DCAM 2024 Peace. I would not advise folks to use two-coin holders as a matter of routine, because of re-sale concerns. That said, I have these in *my collection* permanently. Re-sale is not *my* concern. They are "coin stuff I like".
