For the middle gap in the bed, you could totally install a hinged flap to cover the space. So you have options to spread out completely and make it out as a sleeping/bedding platform if you wish to.
Another option once you have that gap closed and leveled as a full platform is to have a small "floor" sitting area. Throw a light rug or tapestry, some flat cushions, maybe a low table and it will make a nice space for tea or seated meditation!
We all had custom vans in the 70's, What a time!

The middle part of the bed can be used as a bed side table. Put your book, chapstick, lotion etc lol
To be honest, I mostly stopped watching when you moved into the Civic and was overjoyed to see this Back in the Van video pop up. Then I was disheartened all over again when you said you were transitioning out of vanlife. You were the first vehicle living channel I stumbled on way back in your Liberty days and it opened my eyes to a whole new world. Initially, my reaction was that I wouldn’t be a viewer anymore with your vanlife ending but after some reflection, I realized it’s not just your vanlife that we’re here for, it’s your entire journey, and getting to see your life grow and change is a privilege we’re lucky enough you want to share with us. So thank-you for everything and I can’t wait to see what’s next for you.

Had you thought of using a removable wooden cutout between the 2 beds? Like, in the event you actually want to sleep directly next to that person. I realize with part time vanlifing, not such a big deal anymore, but for those stuck in it with no where else to go, seems like having a removable piece between the 2 beds, you could still have the same functionalities of the desk and separate beds and cooking area with the added function of being able to have a full on queen bed if you choose to, which on a separate note, I know I recommended it in a past videos comment section, Teton sports mammoth deer hunter bag rated for negative 35 degrees! They make one that can fit 2 people and it’s huge. I seriously can’t recommend it enough. But that being said, lookin forward to the future content even if it’s not fully van life related lol

Idea: Build a low strong box under fridge behind drivers seat, to raise fridge a bit and provide a drawer space or cubby for ....??
Maybe you can put a small sofa chair in that small open area by the wall, but that's your van, very nice.

YAY!!! I like how you are settling into part-time van life! On the topic of securing the under-counter stuff, I was wonder if you could just use some hooks and run bungee cords up and down to keep things from moving/flying out.
That's pretty much the "easy fix" idea I was gonna go for. I just don't wanna go the door route lol

( banana /oranges potatoes boil ..cut small /salt / pot lid and it does not take much water or time to cook up...carrot green peas in can ..sunflower seeds...seal bag to keep fresh....scramble eggs...olive oil is best...only use medium heat with oil...too hot & oil smokes and then it's unhealthy. Sardines in can...10 grain bread...) your a very positive girl Keep it up. ( inspirational story Life without Limbs Nick Vujicic )

Do some oversized window covers with neodynium magnets sewn in them to strap them onto the open metal. Use a denim between a reflective and durable fabric so it can withstand moisture a bit have someone diamond stitch it up. Would be able to keep it warmer during cold months
Congrats on the next stage of your life. When the title of the channel changed I think it was just the beginning of things to come. Your journey from small vehicle to large vehicle was inspiring. Perhaps one day I'll have to finances to transition to standing height.

Perhaps you could make that center board down from the bed swing upward to more easily reach things in storage. You could have a larch to keep the "door" up while rummaging. 👍

Awesome build this far. Here in South Africa we get something that's called "smash-and-grab" which is like a window tint in various shades that will work good for your van. Almost like a one way see through. 🤠
Oh wow here in the US smash and grab is when someone breaks your car window and steals whatever is in your car

Seems like those big black pads sure take up a lot of useful space
If you put 1x2 frame around opening and recess it a 1/2 inch you could drop a piece of plywood over opening and still use entire area as queen bed if you were travelling by yourself and it would be removable for setup you have now is accessable just a thought
I found that if u close off your van folks will look in to see what your doing had full curtain behind seats and side door and two moon windows in back folks would look in them if curtain was pulled if open they just walk bye

Hey! Long time. Really glad your back to working on the van. I will be uploading last years trip much much later, but will cut you out so no worries. 😂. Also I forgot to tell you how impressed I am with your carpentry skills. This pandemic has been insane and has halted some big plans, but still moving forward on TH-cam. I like the reality aspect of your videos. Too much of them are made to look prefab and you can tell a whole lot of money went into those. Yours is more what the common person on a budget would actually have. Btw, you are so beautiful yet so sweet and genuine. Your guy is one lucky guy to have you in his life.
You guys should make a drop leaf table next to the other bed instead of our creative desk idea. I feel like you guys would really benefit from that 😊 so you could not have to ever move the bedding 🤔
