How to Make a $10 Smash Cake at Home in ADVANCE

  • If you're going to let a cake get completely mushed--might as well save some money and make it yourself! What a great memory it will be for you to look back on the photos (which is why we make these types of cakes, right?) and remember that YOU made the cake for your little one. With so much to do on a first birthday, it's super useful to be able to make this ahead of time.
    Not a parent? No problem! This cake design is also so versatile that it could literally be used for anything. Want to make your own wedding cake ahead of time? Simple birthday cake? Making a cake for one or two? Running a home based business and you like to have stock cakes? DONE!
    This is not my original recipe, but I have misplaced where I found it from! Please let me know if you know where this is from and I will credit it accordingly. I multiplied the original ingredients by 4 so I could make large batches of cakes. This recipe makes around 6 6 inch cake pans.
    Dry Ingredients:
    5 Cups Cake Flour (I often sub for all purpose flour which changes the crumb slightly, but it's still good)
    5 Teaspoons Baking Powder
    2 Teaspoons Baking Soda
    Wet Ingredients:
    8 Eggs
    3 Cups Sugar
    2 Cups Buttermilk (or whole milk with two teaspoons of lemon juice added into it)
    2 Cups Vegetable Oil
    Tools I Used:
    Metal Spatula
    Metal Bench Scraper
    Tipless Piping Bag
    Edible Food Dye

    I will be using six 4x2 round pans... I would like to make them at 325 to avoid domes... In your opinion should I bake all six at one time if so how many minutes? Orrrr 3 at a time and how many minutes again at 325 thanks in advance ☺️

    How do you freeze it? Does it need to be put in a big container or wrapped in plastic or anything? And then defrost overnight in the fridge or right on the counter?

      Put it in the fridge first and then once it’s solidified, wrap it in plastic wrap and then place it into a container or if you have enough freezer room you can leave it just double wrapped. To defrost, put it out on the counter or fridge and take off the wrap right away. It will defrost fully in about an hour or two. Hope that helps!

    Do you have a recipe for less batter, or can I use this batter to make 12 or 24 cupcakes, two 8" or 9" round cake pans, or a 9 x 13" baking dish?
    Also, can you make a chocolate cake by simply adding powdered cocoa to this recipe?

      I believe I used Americolor airbrush electric blue actually. I mixed it in just like a regular edible food gel.

      I think one drop or two of plain old blue food coloring would make that color (start with one drop, you can always add more, but cant take away if you add too much). When I make oobleck (cornstarch and water, turns into a white substance like toothpaste) as a science experiment with kids, one or two drops of blue food coloring in a pint of white ooblek turns that exact turquoisey color.       I've used sandwich bags. You have to try to get a much air out as possible though. That's why saran wrap is so good because you can shape it to the cake.

    For the buttermilk, if I need to cut your measurements by half would I also cut down the lemon juice in the milk by half?

    My cakes were not done after 25 minutes, did I over mix or why would this be, they are smaller than yours as well

      Oven times vary a lot so not to worry if it wasn’t finished; just place it in for a bit longer and tent with foil if it’s too brown

      Theoretically 3 months, but I would say guaranteed 1 month with no noticeable difference in taste.

      If you just make the single smash cake, it can feed around 8-10. If you make the full recipe I provide in the description, it can feed probably 30-40 people depending on how hungry they are! 🥰

    I use vinegar instead of lemon juice because it makes the milk curdle faster. Of course, I've tried lime juice, not lemon juice.

      Pretty much the same thing except its sole purpose is to get smashed by a child (usually) and will most likely not be eaten in its entirety 🥰

      I usually add the soda and baking powder to the flour, then mix with a whisk or sift together.

      🎉 update: it was. And the layers went super thin. I baked it at 350 °F for 20 minutes.
