Brigadeiros - delicious and sweet bite size Brazilian dessert

  • This little dessert should be in everyone's arsenal of how to impress your sweet tooth havers or unexpected guests when you have little time on hands. Brigadeiro - classic Brazilian dessert of 3 simple ingredients.
    A must have dessert in your dessert book.
    Combine in non stick pan a tin (397 g) of condensed milk, 3 table spoons (30 g) of sifted unsweetened cacao powder and 1 table spoon (10 g) of unsalted butter and 100-150 g of sprinkles (can be any colour you have).
    Over low heat, melt all ingredients stirring continuously until you can see the bottom of the pot for 2-3 seconds when dragging a spatula through. Usually within 10-12 minutes.
    Then pour the mixture onto a greased plate or if you have a silicone mat and chill for at least 1 hour in a fridge. I decided to shape my mixture into a rectangle for easier slicing into my preferable bite size later. Working with spoon as measure for bite size balls is also an awesome idea.
    Key is to have clean hands so wash them before thoroughly and slightly damp them (literally one drop of water in between palms when needed) to prevent dough sticking to palms. Shape and roll the chilled mixture into balls. Then roll the balls in chocolate sprinkles.

    P. S. Tips: if the batter is undercooked, your brigadeiros will be too soft. If the batter is overcooked, they will be hard and chewy. The batter is done when it slides to one side of the pan in a blob and leaves a thick residue on the bottom. Great texture is all about knowing just how long to cook the batter. Few tries and you will know, however, they are always delicious even being too soft or too chewy. 😉
    P. S. S. Keep your ready to enjoy brigadeiros in a fridge in a container for up to a week (doesn't last that long in my household 😅) or put them in an air tight zip log bag or container store in a freezer for up to 3 months.
