    Part 2 of the Ramen Pop-up with Ramen lord. In the previous episode we prepared 300 portions of noodles, but in this one we are actually hosting the popup. So many people show up and the pressure was on. It is one thing to cook for youtube videos, but it is another to cook for real guests. We made two different bowls of ramen, one Korean inspired and the other one French inspired.

    It is humbling that a Frenchman and an American are making Ramen in a Korean restaurant in Chicago. An example of how food that spreads into other cultures just gets better and better.

      Asian and Western collaboration is actually pretty common, not just in cuisine but in business and culture in general. We work well together since we are so different but know how to complement each other and add something unique or a little twist to what was already created. This was just one example of it but there are endless examples from TikTok to spaghetti to DJI drones to architecture.

      Ramen is also called, ‘Chuka Soba,’ in Japan. Literally, translated to ‘Chinese noodles.’ So, it’s a Frenchman with Korean Americans cooking a Japanese reinterpretation of a Chinese noodle dish. 😂

      I love that the more Alex becomes famous, the more he reaches out to people. He could have isolated himself from the world and made the same type of videos with the same circle of friends, but no, Alex wants to learn.

    There’s a great feeling chefs get after a really good dinner service, a hard fast clean down and lots of happy customers. You get outside afterwards into crisp late night air, usually with a beer and a cigarette, with your buddies and just feel at one with universe. Looks like Alex felt this that night.

    I spent 5 years working on a vietnamese foodcart in my city. Started by 2 young, first generation immigrants. At first things were a mess. But these guys had passion, and while working there (I didn't even know how to cook for myself at home when I first started washing dishes for them) I learned how to have my own passion for food and feeding people. We ended up winning Best Food in our local paper 3 years in a row because every plate and every bowl mattered, and we worked hard, as a team.
    Watching you sit down at the end of your day to finally get to enjoy your own product really took me back to that time of my life. Your feet hurt. Your hands are burned and sore. You're thirsty, you're starving... you sit down with a copy of what you've handed out all day (with maybe a few personal tweaks, and maybe a beer heh) and experience the first silence and the first calm you've experienced since you clocked in, and you're in heaven. And if you made a lot of people full and happy, you earned it.

    This got me teary eyed. I remembered my ramen shop, opened it back in 2018 but had to close in the beginning of 2020. I did everything from scratch as well. It was you, David Chang, Ivan Orkin, and Momofuku Ando who opened my dreams to make my own Ramen Shop.

    Well for some reason I got emotional at the end. Watching this after following Alex since the beginning and thinking how many INCREDIBLE PEOPLE serve us unseen with SINCERE FEELINGS to fill our stomachs with great food. For a person who feels loved and loves food (it's a love language) this was really touching. You've inspired people, some have changed their lives and started something new (shout out to the long time viewer now baker) and it's been an incredible journey around the world. Wherever you go from here Alex... I want to see it and thanks for sharing you love for cooking with us.

    Alex, i would really enjoy a video of yours explaining the "french brigade" restaurant process that takes place in some michelin star restaurants.     OMG, I'm in Chicago - wish I'd been there! You should make it a regular gig every few months so more people can enjoy the experience. Maybe experiment with two different flavors next time. As a chef, I had to laugh when you explained the difference between cooking in a restaurant vs. cooking by yourself. It definitely takes time to build the stamina and teamwork muscles to work the line. Congrats! ❤

      It'd be amusing to see how he handles that heat. Most French I know are more savory fans than hot spice. That said, there are a lot of restaurants in Paris that serve food hotter than I like, and I'm Texan.
