years ago we lived on a boat on lake macquarie and had a witches hat over the back at all times. i used to take crab meat sangas to work and swop them for ham and cheese sangas. memories. Fair Winds.
My old man is a commercial spanner crabber. Grew up eating them as a kid and still do when visit my Dad down in Ballina. He still spanner crabs for a living. Ive always said they are the best eating. Great vid 👌

The trawlers used to throw away the occasional spanner and Moreton Bay bug back as bycatch then. The public didn’t know what they were missing.

Claws have fast twitch muscle in them. The body meat is slow twitch longer muscles that are softer and more tender than the striated fast twitch claw muscles.

Fantastic crab festival, well done on the variety, I have also been lucky enough to try all 4 , and I agree with your taste buds, spanner is the tastiest,. When I was diving in Nz quite often our table would look similar to yours, just different species, Crayfish, scallops, mussels and oysters, we are so lucky to be able jump into the water or set a few traps and enjoy the fruits of the ocean. I think Rum in the coke helps with cleansing the pallet 🤣

That’s where I experienced gout for the first time, I had no idea what it was until someone told me about it, the cool waters in Nz soothed the burning sensation I had in my big toe as I slipped on my semi dry and sank beneath the surface. I hope you make it there as well, sharpen your spear tips and new rubbers all round , those riffes will certainly get a workout 👍

Iv never had spanner crab so can’t really comment on it, but coming from south aus our crays are very sweet. Iv had plenty of everything else on your menu and for me it has to be blue crab ,it’s just the most salivating sweetness one could wish for lol...cheers on a great lengthy episode.🦀🦀🦀

Different parts of the crab taste different. Should be body meat to body meat. But I don't think there's a real winner; it's all so good it's ridiculous! But I love the "Grand Slam"!
Hmmmm....hope that wasn't an Asian paddle crab (Charybdis japonica) - invasive species. I think there is merritt in discovering the best way to cook a diverse range of seafood (not over indulging any one species), you might just be in an ideal position to continue this mission, happy hunting
Cheers we are definitely lucky to be able to experiment cooking expensive seafood without paying for it (directly anyway 😂) We did think it might have been a Asian paddle crab but it turns out it was a Velvet crab, which we have since experimented with and can confirm, it’s delicious 👌

A second look and listening more intently you said velvety (as in little hairs) makes me pretty sure the crab is what is known as a Hairyback crab (Charybdis natator) ..... an Australian endemic (found in NSW) close relative to the Asian paddle crab (Charybdis japonica). Good to know they are decent tucker ...... no rating? (..perhaps between blue swimmer and a muddie?)

Never knew there was such thing as a poisonous crabs, some very interesting google results! Just when you think you know about the ocean you learn something amazing! Although I can assure you the spanner crab is safe to eat and is caught and sold commercially all over the world.

Yeah freezing crabs isn’t great, I head if you partially cook them it helps avoid the cotton wool texture.

Just reflexes, I actually got bitten on the leg recently with a well dead muddy as I broke a claw off!
