Homemade Vanilla Ice Cream the Old-Fashioned Way

  • Our homemade vanilla ice cream recipe has been a summer staple for as long as I can remember. How to make it the old-fashioned way using an ice cream maker.
    ↓↓↓↓↓ VANILLA ICE CREAM RECIPE BELOW ↓↓↓↓↓

    INGREDIENTS:
    Ice Cream -
    6 large eggs*
    1 1/4 cups pure cane sugar
    4 teaspoons vanilla extract
    14 ounces sweetened condensed milk
    24 ounces evaporated milk
    1 teaspoon salt
    6 cups whole milk**
    Freezing Ingredients -
    16 pounds ice
    3 cups rock salt
    INSTRUCTIONS:
    1. Start by creaming (or mixing) the eggs and the sugar together using a mixer.
    2. Then add in the vanilla extract.
    3. Next, mix in the sweetened condensed milk, scraping all the ooey gooey liquid out of the can with a spatula.
    4. Add both cans of evaporated milk.
    5. Add in a good-sized dash of salt, which equals out to about a teaspoon.
    6. Mix everything together well.
    7. Make sure your ice cream freezer, especially the canister, is washed out and ready.
    8. Pour the mixture into the metal canister of your ice cream maker.
    9. Finish topping off the canister with whole milk, making sure to fill it about 3/4 of the way full, leaving room for expansion as it freezes. Your metal canister should have a fill line.
    10. Put the lid on, and place the metal canister down into the bucket of your ice cream maker.
    11. Crush a big bag of ice, gradually pouring ice around the canister. Tip: You can add up to a gallon of water if needed, as well. We sometimes do this because our motor will seize up. Adding a bit of water will help it keep turning.
    12. Add 2-3 cups of rock salt as you add the ice, making sure to top it off with rock salt.
    13. Let the motor run until it stops. Once the ice cream is frozen, the motor on your ice cream maker will stop churning.
    14. Unplug it immediately. This should signal that the ice cream is completely frozen.
    15. Wipe any excess ice or rock salt off the lid and out from around the top of the canister. Then remove the lid.
    16. Carefully remove the churning paddle.
    17. Serve the ice cream immediately. If you’re not ready to serve it up just yet, you can always leave the lid on, remove the motor, top the canister off with ice, and place a towel or two over it to insulate it and keep it cold.
    *Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food borne illness, especially if you have certain medical conditions.
    **You can use Half & Half in place of the whole milk if you want an even creamier texture to your ice cream.

    This is the exact "recipe" that I used when my kids were growing up. I'm diabetic, so I don't make it now, but my 50 year old daughter has been bugging me for this family secret for years. I couldn't remember the amounts, so I'm so glad I found this and we're having it at a family get-together today!

    My mom used to freeze milk cartons of water. Then on ice cream day, my dad would throw them in an igloo cooler (made from metal!) - and chop them up with an ice pick. Lots of work, but it was free. You can also just hit it with a hammer. Just wear eye protection.

    I got nostalgic for my grandmas ice cream and went out and bought a ice cream freezer and stuff to make it. 100 110 dollars and several hours latter I was rewarded with the taste of my childhood, it was wonderful. I encourage every one to make their own, it is so much better than store bought. and you'll have the freezer for ever to make more!

    My mom used to add mint extract & green food coloring. For mint ice cream.
    It wasn't as smooth & creamy as Thrifty's mint & chip icecream, but it was really good.

    Thanks for this recipe…It’s exactly the same recipe my mother always used. Never had the banana until I married over 50 years ago since that was my husband’s family’s favorite. Banana is the only flavor ice cream I make now and our sons and their families also love homemade banana ice cream 😋

    Just made your recipe today as a trial run for this weekend. It's my first time ever making ice cream and this video helped me out 100%. All the other videos I looked at wanted you boil and simmer things first.

      That's awesome! Yes, many recipes require you to cook the eggs, which is understandable, although I prefer it with raw eggs. For example, one reader over on the blog says that, “I did bring the eggs (mixed with some of the milk) to 160 degrees, just how I have always done it.” If food poisoning from infected eggs is a concern, that would be something to think about. However, we generally use eggs from our free range hens, and we've not personally had problems.

    U can buy an electric vice cream freezer for about $30 at dollar general store or Walmart for about $45. Don't need the vintage looking one for $100. Just a waste of money. Get the basic ones. They work great

    You mention a feed store for the rock salt to use for freezing. I wonder if most livestock salt or even water softener salt (long as it's not in pellet form) would work too. I still haven't found a "favorite" recipe to use with my old school ice cream maker, but I plan to give this one a try next.

    I can't eat dairy anymore so I freeze banana slices and then put them in my Bullet blender with strawberries or other fruit.
    Makes a good ice cream substitute!

    I wouldn’t worry about the eggs, hey you’re still alive and kicking. Lol. People forget about when there was no pasteurization or for refrigeration other than big cubes or should I say blocks of ice. I would totally love to try this ice cream. Love your channel!

    I use to have to crank when we was kids. It was worth it though, and all us kids lined up to take turns. When the electric ones became popular, it was nice not to have to crank. Kids have it too easy today! 😂

    Cracks me up that we (the Southerner's) have to explain what rock salt is, because in the South...we all know about rock salt. Right my fellow Southern friends? Lol. I just had to say it. Great video! It's just like my Grandpapaw and Grandmamaw made it every single Summer.

    I remembered the part when she was cleaning the lid off, to take off the lid, dad used to always say, just don't get any salt in the ice cream and sure enough, she said it too.....Its def important unless you like salty ice cream...

    I'm 63 years old when I was a small child we had these big neighborhood potlucks. With slices of cold watermelon on ice, lots of cold salads my uncle lived across the street him and the other men did all the barbecuing. My Dad loved making homemade ice cream of us took a turn one had to sit on it the other one had to crank it. My dad used to make vanilla ice cream then he would take those sugar-coated lemon drops crushing them with a rolling pin then stir it in the ice cream. Such a fun time to be a kid playing red light Green light, Simon says and hide and go seek.

    Thank you for the recipe! The best so far. Just 1 note. 1 tsp is way too much salt. It was very salty. Next time I’ll try 1|2 tsp. Thanks again!! My family really enjoyed it!!

    Well, let me say that your vanilla ice cream recipe isn't good...it's the Best I've had. Your recipe nailed it. I did everything just like you said and turned out GREAT!     This was an amazing video! Thank you for sharing! My uncle that recently passed used to make homemade ice cream for our family and I never learned the recipe or how he made it. This looks as good as his. I hope to replicate it in the future. This video was very helpful for me! One question, how long does it takes once the machine start till it turns off?

    Take a box of little ANDES dark chocolate mints, freeze them, then shred then into the mixture along with Peppermint ext. and green color. ITS TO DIE FOR!! Freezing the Andes keeps it from meting and bunching during shredding.

      maybe you could blend the fruits you want in the blender and then mix it in the ice cream. Then you could chop the rest of the fruits and mix them in too

    Yeah rock salt is definitely different 😂and needed for making ice cream, can't understand why someone would try using table salt or wherever they did 😂😂😂❣ My grandpa used to make ice cream every summer, wish I had his old wooden maker😊❣Thanks for sharing❣ 😊🍻 Milk cartons work good to, as long as they are not plastic!!!!!

      hello, may I ask why can't we use table salt? So my sisters and I discovered our mother's old ice cream maker and we've been trying since like an hour now, yet there is no result. Is it because we're using table salt?

      Table salt works just fine. It's the same same chemical. NACl. Look it up. You just have to use more.

    The finer the ice, sown to about 1/4 inch chunks, the smoother the finished ice cream.

    How do you dispose of the ice with rock salt afterward? I'm wondering if the rock salt could hurt our pipes going down the drain. Any thoughts? Thanks!

      That's a good question. I wouldn't put it down the drain, as it could be hard on your pipes. I would dump the water somewhere outside and throw the remaining rock salt in the trash. Thanks for watching!

    Does it help if you premake the ice cream mix and put it in the fridge overnight and also freeze your cannister before using?

      Stacy, I always recommend freezing the canisters ahead of time, so that they stay cold, That said, mixing up the ice cream ahead of time is not necessary, although you can do it. It just won't help very much. Thanks for asking!

    For those like me that have a Rival ice cream maker that's never been used and lost the directions......there is hope.....TH-cam has a tutorial for Rival products and is simple. What I really wanted and needed was Mel's recipe for vanilla ice cream to go along with blackberry cobbler for my son's upcoming birthday......can't wait to try!!!

      It usually takes our ice cream maker anywhere from 30-45 minutes.

      I use a 4 quart ice cream maker. You can simply divide the recipe ingredients by 4.
