  • Glazed Chicken Skewers with a Savoury Pea Rice
    (Serves 3-4)
    For the Chicken
    500g boneless chicken thigh
    5 Cloves Garlic
    Ginger
    1.5 tbsp Chili paste
    4 Tbsp Teriyaki Amino Sauce
    4 Tbsp Olive Oil
    4 Tbsp Honey
    ¼ Lemon
    1.5 tsp Salt
    For the Rice
    1 cup Long Grain Rice
    1 cup Frozen Peas
    2 cups water
    ½ Onion, diced
    Curry Leaves
    3 Peppercorns
    3 Cardamom
    3 Cloves
    1 stick, Cinnamon
    Butter
    Olive Oil
    Salt
    Method
    To make the Chicken
    1. In a large bowl. Mix together minced garlic, ginger, chili paste, teriyaki amino sauce, lemon juice, olive oil & salt with 3 tbsps of the honey
    2. Cube up the chicken in to 1x1 cm pieces
    3. Toss the chicken into the marinade and mix well
    4. Cover with cling and leave to marinate for atleast half an hour or over night (in the fridge)
    5. Soak the wooden skewers in water for half an hour
    6. Once the chicken has marinated, give it a quick mix to coat in the marinade again
    7. Thread the chicken onto the skewers- you should get about 10 skewers
    8. Pour the marinade into a saucepan with 1 tbsp of honey and bring to a simmer over a medium heat until it has reduced a bit in volume and has a sticky consistency
    9. Heat a skillet until very very hot and lay out your chicken skewers
    10. Cook for 3-4 mins on each side
    11. Brush on the glaze while cooking
    12. Once your chicken is slightly charred and has a golden colour it is ready to serve
    To make the Savoury Pea Rice
    1. Heat up the butter and olive oil in a saucepan
    2. Add the curry leaves and let it sizzle for a few secods
    3. Add the peppercorns, cardamom & cloves and give it a stir
    4. Add the diced onion and cinnamon stick, stir and cook until the onions are translucent
    5. Add the frozen peas, stir
    6. Season with salt
    7. Wash and drain your rice and add this to the saucepan
    8. Stir well until the rice is coated in the spices, onion and butter
    9. Season
    10. Pour in the water and bring it to a boil
    11. Once the rice is cooked plate it and put the skewers on top and pour the glaze over
    12. Garnish with some white sesame seeds and parsley (optional)
