    I am one of his staff. Learning from him is an amazing experience. As shown here he is so down to earth. So humble. Knowing Saito-san and learning from him is one of the best thing that has happened to me. Thank you Simon and Martina, for allowing others to know chef Saito better. Absolutely love this video.

      Ivonny Hi. Ubdortun being a first timer and also a non Japanese would be extremely hard for you. As Saito-san's restaurant is a members only restaurant. You are able to get a reservation if you somehow meet a Japanese who is coincidently a regular customer of Saito-san. As of now he is booked out for the while year. That is what he told me the last time we met. You can try to call his restaurant every 1st of every month and try your luck in getting a seat. On some rare occasions, he would allow an extra seat on his counter for non-members

      yeah they suck, joke, but I do think it was an elaborate plan to film a documentary just in order to get some free high quality sushi!

      +Amp, Saying that they got to eat for free is actually very dumb. This was japan. I believe it was hard enough to be allowed to film, with another customers never the less, so just to pay the usual fee is actually very lucky already.

    The thing that I've always respected about Japanese culture is the dedication to quality. They look at their jobs as a craft, a craft to master. And for a customer, it is a very satisfying experience knowing the effort and detail that goes into producing the final product. For me, there is no cultural experience quite like dining out in Tokyo.

      Saito san must have been through tons and tons of shitloads of hells just to get to where he is right now. It shows on his face and aura. I am too scared to even imagine what he went through in his early training days.

      in Japan, people take their jobs very seriously
      and to earn the title of "Master" then it's a huge fucking deal
      cuz you don't just graduate and earn it, you have to really work your bones for it

      Oh, and the experience you guys had where you froze up and couldn't think clearly is called "Stendhal Syndrome". It's a psychological phenomenon where in the presence of amazing art where the audience is struck dumb by the experience. :) It really is one of the greatest compliments one can give an artist.

      it should be simple, but the flavours should work together I wouldn't rely on just the flavour of fish & rice...for me needs flavour balance acidity/sourness, sweetness, bitterness, spicy, savoury, smoky, salty & even have a minty or aniseed flavour.
      those elements usually come from the rice vinegar & soy sauce & the saltiness of the seaweed...I'd use smoked fish and the rice provides a savoury element & coriander can provide a bitter element, for spice add chili.

    料理で人を幸せにするって、簡単な事のようで実はすごく難しいことだと思う。

      これは食べる側にも言える。
      口内調理ができること。地域や季節に応じた魚の旬、部位に応じた味覚の違いについての知識があること。お茶やお酒の相乗効果を知っていること。
      さらに言えば皿やツマなどの色の演出、食材が醸し出す香りの違いなどの知識があれば、もっと奥まで進んでいける。なんという日本料理の奥深さよ。

    This sushi master acknowledges his team before himself. You already know your dealing with someone at a much higher level with that amount of humbleness, sincereity, and loyalty. Mix that with his amazing skills and extensive training and now your dealing with a Legend. Awesome!!

    Watching Mr. Saito work is mesmerizing. I've never had sushi so I have nothing to base my opinion on, but you can instantly tell you're watching a master of a craft at work. The delicate movements, the way his eyes never blink until he's satisfied with the end product, the perfectly choreographed start to finish motions that reveal the (probably) thousands of hours he put into mastering his passion is just addicting to watch. Thank you Simon and Marina, for letting me watch an art form from the comfort of my home,

      shaving their head, I think is their way to show totality and sincerity (both are really important aspect of life in eastern society especially in japan) into their craft, showing how hard they tried to maintain hygiene for the food. To prepare food on kitchen, in general u suppose to wear hat that cover all of your hair so no hair will fall into the food u prepare. Though shaving their hair really is "extreme" version but it is in a good way I guess :D

    Sushi Saito is often acknowledged as the best sushi place in Tokyo, and some argue he's the best in all of Japan. We got a once in a lifetime opportunity to not only eat, but also shoot with him.

    I seriously love how many views this has gotten. It's such a well made video and I hope that one day I can taste this amazing sushi! I kind of feel sorry for people in the comments who say you're overacting. Like, how do you just go through life mindlessly shoving food in your mouth, not paying attention to the flavors? When you have seriously good food, you just can't hold back the emotions. Been of fan of you guys for years and you always make such awesome videos.

    I am Japanese. Thank you so much for giving me the videos that respect the Japanese culture in this way. Also, I was moved to express my feelings towards sushi in a wonderful way and it was such a tearful truth. Respect each other 's culture. I think that such a world is desirable. I think that it is wrong because I am not good at English, but I am pleased that this happy feeling is conveyed.

    There is so much emotion involved in this sushi. I like how you mentioned and reflected that that one night experience lingered on by a week to a month. And that is not good food, it's an experience.     I nearly cried watching this video. I can't imagine being present while he works. He is so passionate about his work. The level of emotional involvement and pure, honest love about making everything exactly right is evident in all he does. His love of life, his commitment, his passion, - it all goes into his food. He even said it himself, he carries the feelings of everyone who helped him when he makes his sushi. He is truly a master. Thank you Simon and Martina for making this video.

    I watched like a million video about sushi or how to make a great sushi, even how to make seafood. This video is by far the best one I've ever watched, they started out like a tour, from the very beginning, and like a story-teller, the adventure starts from there. They had there point of view, the best part is that the sushi master Saito also get to say what's in his mind, like an interview, let him tell his own story. In the very end also did like a reflection of the experience, it's like never before. After watching the video, I feel so respected for the Sushi master Saito and Simon and Martina, the video is perfectly made.

    What a lovely man. He has so much feeling and integrity for what he does. I loved seeing his face in the fish market. That was a happy, happy man, doing what he loves. Watching him work is pure art. It's wonderful to see.

      I agree but on a serious note, after have worked in Japan 3+ years in environmental engineering, I've also seen a darker side to this strive for perfection. People literally work themselves to an early death and fear of failure for sure takes it toll on the health and well being of so many. At the company I was working at, they had a quite "forgiving" attitude towards us Europeans but I think I worked at least 10, up to 20 hours overtime (more than 40h/week) every month but I know many of the native colleagues worked much more.
      So even if "Japanese culture and working ethics" if you will, will create masters, it also comes at a cost people rarely talk about.

    I may have already commented this, but I must say Martina, you are a sight 😊 Simon, you’re the reason I keep coming back to this video, you have the ability to truly give the viewer their own semi-virtual experience, letting fellow diners give their own speechless experience and you detail every piece with so much passion, I see it in both of your eyes 👀 as well as your invisible, but ever present link between you and Martina. I also adore how simple yet pleasing and satisfied her reactions are to every taste. This may sound strange to you but not so long ago I was in a very dark and lonely place, my family isn’t very close and the only relationships around me were falling apart if not already broken and it left me feeling unsure about if I wanted a future... Trying to distract my mind one night I was on TH-cam looking up lore and mythology, trying to find a sense behind... well life and living in general, but then as I closed out the tabs and returned to searching, I saw “saito: the sushi god of Tokyo” and feeling like I would fall asleep soon enough I clicked on it just for something in the background as I tried to sleep, soon enough I was fully awake again watching you two enjoying each other’s company in a foreign environment and even having a friendly interaction with strangers as you all enjoyed a shared passion together, even though you didn’t know any of them. Living in Central America it’s not hard to become an outcast or separate yourself from today’s society, but when I saw you two together, in this new place, doing new things and just being together in the moment 😊 to sum things up, I wouldn’t go so far as to say your TH-cam channel saved me from suicide, but it did change the way I think about myself and the future I could have, being who I aspire to be with the person I love (if the universe wills it so) so thank you

      Same. I respect the skill involved even if I dont like Sushi... I dont like raw meat. I dont like 'fishy' stuff. And you dont know how many pretentious people have told me I just havent had 'the right kind' implying ive only gotten cheap stuff.     You don't often hear of fish being aged and any sushi gourmet knows its importance!! I share Saito's attitude regarding traditional sushi and I've never found it anywhere but Japan, My all-time favorite sushiya was in Fukuoka, 1960. For the lack of refrigeration the raw seafood was laid out on cloth covered ice, under glass. On the front of the counter was troth with filtered water circulating allowing you to dip your fingers. Back then no one used chopsticks for sushi. That's what I call traditional!!

    I just want to say, as someone who has been here (fairly quietly) from the beginning pretty much, I am so proud of what you two have achieved and continue to achieve with your quality of food documentary shorts. I remember the days when this channel was you two in a tiny kitchen with a laptop doing parodies in wigs of music videos- and don't get me wrong,that's how I fell in love with your content, but watching you grow and improve and expand and now produce quality content like this that has a very honest, clear approach to food is amazing. Your shots, editing, sound editing and composition are in the same field of documentaries like chef's table, and the quality of chefs that you are interviewing is awe-inspiring.
    Your growth makes me get teary-eyed.

    I am a dentist and one of lowest most inexperienced guys. I stumble, and I make mistakes, but I am extremely hard working.
    Just seeing the passion and energy this guy has put into his work has seriously inspired me to achieve greater and be the best version of myself.
    I will no longer treat my work as a burden or a job thrust upon me. I will treat my trade like an art and a labor of love and passion just like this man has.

    Wow! I have never eaten or tasted sushi in my entire life. I’ve always avoided it for fear of getting ill from it being uncooked or receiving bad meat.     2019 and I'm still here to watch this amazing chef so passionate about his work, the amount of respect towards the food, how his food are able to connect with people is simply simply amazing.. I truly believe that these 2 are not overacting because as Im watching these video over and over again I felt this overwhelming of appreciation towards food and the chef's passion for his job.. I'm not trying to say that his food is a God level deliciousness or something but any food can be delicious in general if you made it right, but its actually all about the experience and appreciation that makes the food taste amazing! Like your mom's/dad's cooking when they're gone, first bite of delicious food where you haven't had in a while.. It can be anything. It's all about appreciation ❤️
