The first version of the current run of Jeopardy! Yes remixed with the congas in the 1990's but eventually updated in the late to mid 1990's. Also with the dropping of the 1984 version the 30 think music itself would also get updated doing away with the iconic 1963 think music for the Final Jeopardy end game.
“Jeopardy Theme” was the version used on the show from 1984 to around 1991, while I’m almost certain “Merv’s Theme” is a (re-)arrangement of the song heard on his talk show.
Mercy me! I just looked at the liner notes, and this album has a lineup of first class Hollywood Wrecking Crew members (Plas Johnson, Jack Sheldon, John Guerin, Mort Lindsey). You know Plas best as the tenor sax man on the Original Pink Panther theme and Jack Sheldon as Mr. School House Rock and John Guerin as master of jazz-fusion soundtracks for such shows as Hawaii Five-O, Mary Tyler Moore, Bob Newhart Show, and Streets of San Francisco.

Wheel of Fortune Debut in 1975 on NBC Daytime with Chuck Woolery later of SCRABBLE, Love Connection, The Dating Game & GREED as host and Dr. Susan Stafford as hostess, in 1981 Pat Sajak took over as host and in 1982 Vanna White took over as hostess and Wheel debut on Nighttime Syndication in 1983 and in 199 during the show's 14th Anniversary, Sajak left Daytime Wheel and Rolf Benirschke took over as host until the show left NBC Daytime and NBC Studios Burbank, CA on June 30, 1989 In July of '89, Wheel moved to CBS Television City in HOLLYWOOD and on CBS Daytime with Bob Goen as host and Pat Sajak hosted The Pat Sajak Show on CBS Late Night for 15 months from January '89 until April '90 In the fall of '89, Nighttime Wheel also moved to CBS Television City in HOLLYWOOD and Wheel stayed for 6 years until 1995 and Daytime Wheel stayed on CBS Daytime for 18 months until January '91 when the show moved back to NBA Daytime when CBS replaced Wheel with Daytime Talk Show Host Barbara De Angelis and it didn't last very long Daytime Wheel was cancelled in September of '91 due to more local stations wanting Daytime Talk Shows and Wheel continues to reign supreme on syndication and since 1995, SONY Pictures Studios in Culver City, CA has been the current home to Wheel of Fortune Wheel also had 2 spin-offs, Wheel 2000 with David Sidoni & Takina Ray as Cyber Lucy and it aired on CBS Saturday Morning during the 97/98 Season and Wheel returned to network television for the 1st time in nearly 3 decades with Celebrity Wheel of Fortune and both spin-off also taped at SONY Pictures Studios

That Jeopardy theme wasn’t a disco remix. That was the theme from the first decade and a half of the show. They added congas for the 90s.

That arrangement was heard on the final 2 years of his show during the end credits.
