He may be nervous but he may also know what many great pizza makers know and that's that there are many techniques, including the toss. The debate has never been settled nor will it because it's so subjective. In fact, I personally don't think his method is best. However, the method can change with dough type and other factors.
Starting on the flat side, for example, is not something I do. I roll the flat side up with my fingers as I'm creating the corner. This does affect the final crust. My final stretch is done from that side (the "fleshy side") and the "skin" side becomes the bottom crust.
Is mine superior? I think so but I'm not objectively correct in that. It depends on what you're looking for from the finished pie. In a nutshell; there are countless masters and most of them are completely unknown but for a few they serve.
Btw, I learned back in the 90s with the slap, toss and spin method. It doesn't work for all dough types and it's arguably terrible for many reasons but I can say for me at least that the inherent issues with it aren't a problem for me. Just messy. Though it's actually really quick. Back then we even had competitions with fairly large prizes (like 10k dollars) 😅... Pie skin can be a very personal topic for many. I'll leave it there.

The top was still top. it is rotated, not flipped.
It can be upside down when streching, but top needs to be top when its done
@@HuntermaroI thought as well, but if you watch closely, in the end when Vito puts it on the wooden board, the bottom side goes on top, just like he picked it up from the strechting..

So most locations don't even stretch it out by hand
How the hell are you moving in fast speed but your lips are synced with your regular speech? Is this a secret pizza making technique?
i tried pieology a month ago with the hand stretched doug and it just came out completely flat no puffy crust at all, and the taste of the pizza wasn't good the oven was like 550 and it had a gas after taste to it, really not good.
