You will know if the blade is getting dull because it won’t break the threads when you push it through the seam. It should cut the threads without too much force. I hope that helps :)

I remember the first time I used the red ball to zip open a seam. And I also remember the first time I caught one side of the fabric and gashed a hole in it. I still zip seams open with the red ball but I'm a little more careful with it these days! Also a seam ripper makes a great substitute for a stiletto when sewing, and it's a good second use for one that's gotten dull over time (just make sure to mark it so you don't try to use it to rip a seam).
Hi. What if the seams are overlocked together, instead of separately like you showed at 2:11? I can't access the seam, so do I need to unpick the overlock first before unpicking the seam?
