If you're making cake pops, they can stay on the counter in an air tight container (in a cool and dry place) for up to a week, about 2 weeks if storing in the fridge. If you're making cake balls, same rules apply for storing, just make sure you fill in the hole where the skewer was with melted chocolate, essentially sealing everything in. Also keep in mind, if you use sprinkles (such as nonpareils) on your cake pops, they might "bleed" from excessive moisture if you're storing them in the fridge.

Great question! I do let them sit for just a few minutes, usually while I'm getting the melted chocolate ready. But yes, a really cold cake ball straight from the freezer or fridge will more than likely crack the chocolate once it dries. 💖

How does it not crack if your working with a cold cake ball?
I make sure my chocolate has had a chance to cool down before I start dipping the cake balls.
