The thing I never understand with restaurants is that if you're going to take out a huge loan or invest a lot of money into a restaurant why serve shit food or stale food? I never got that. Like if you don't know how to cook or you can't be bothered to properly prepare food then don't do it. It's like someone opening up a mechanic shop and they don't know how to do oil changes or brake changes.
Its wild, and makes no sense to me. In an industry with like a 90% failure rate. Why would you wanna be anything but EXCEPTIONAL. For a lot of places as we have seen on kitchen nightmares, if they just slimmed the menu down, deep cleaned for once, and just honed in on a few recipes done great, they'd be successful. But even still. Like making good spanish rice is cheap and easy to do. Same with good mashed potatoes, and good mac n cheese. Pork is a cheap meat, so f'in that up is beyond careless.I can only imagine what his stomach did to him after eating this likely old, grotesque, semi spoiled ass food. I would never open a food spot unless my dedication to it was bordering on insanity when it comes to quality, and THE WORST PART is that people just want at least some good food. It doesnt have to be the best ever, but so many food spots literally dont even just make good food. They make trash.
As someone with a huge family in the restaurant business; it comes down to laziness, managing staff, and lack of integrity. Some of the failed ones I helped at were straight up lazy in cleanliness, fresh cooking, and no care in quality. The ones still left have at least one person there holding it down and doing things the right way while managing everything that goes out. You may never understand cus you’re not experienced or haven’t owned a business. A lot of people talk out their mouth as customers but don’t know the back office like an owner. It takes a lot to open up a restaurant, it’s how you maintain that level of integrity and quality that makes or breaks the place. Not everyone is cut out to manage a restaurant, even if you’re the best cook in the family. You have to wear several hats to run a restaurant; a cook, server, busboy, manager, and owner. If you lose balance in any one of those, you’re bound to fail.

Jamaican restaurants for example do a lot of stews and you can't just keep making fresh batches. But some of these places are serving old Mac and cheese and old fried chicken. Like wtf is going on? You can't make fresh fried food?
