The sport's not about symmetry, it's about being able to take off with explosive force. As they emphasize, the stance should be personalized to allow each lineman the best movement chances.
Rugby call the no-hand stance the 'Tower of Power' with narrower feet and it's the foundation of safe tackling, line-out, ruck and scrum. It's tought from age ten
From having played football all my life through college then also playing rugby in college, I wish as a kid I had played rugby first then moved into football especially with tackling as I even noticed my form improved naturally in rugby as so I can protect myself more.

He's in his 40's. Ex-football players have bad knees and can't do the same squats and leg workouts anymore, especially for vanity. Guaranteed he once squatted 500lbs more than you ever could and these days worries more about his heart health than how his legs look. Also, big calves/legs don't always mean more power. Genetics have a lot to do with calf size.
