I work at a Rendering plant, and this is basically exactly what we do with our turkey waste and the like. There's giant centrifuge with boiling oil that cooks it, then it runs through a hydraulic press machine that crushes the fat out and dries it. Most turn it to dog food
I love you Colin and I'm no engineer but my ex-chef and now boiler engineer father said the bearing should be on the outside because of the grease and when you need to re grease them... I tried to explain to him this is one of your use one of twice machines but he really want a commercial version

(amazon, eBay) 2. let turkey get to room temperature (DO NOT FRY WHILE FROZEN). 3. rub turkey down with seasonings of your choice. 4. heat canola oil to temp specified. 5. dunk turkey in hot oil and let fry until internal temp specified is reached. 6. enjoy best turkey you've ever eaten. It takes minutes instead of hours and is so tender and juicy.
