Authentic Puerto Rican Alcapurrias-Step by Step

- Ingredients:
5 green, unripe bananas
1 green, unripe plantain
1/3 cup calabaza (West Indian squash) You may substitute it for butternut squash or acorn squash
1 small yautia (known as “cocoyam”, or “malanga.” NOT taro root like I mistakingly said in the video)
1 tbsp achiote (annatto) oil. Or substitute for 1 packet Sazón or 1/2 tsp annatto powder
1.5 tsp garlic powder
• 1 tsp all-purpose seasoning or salt
Vegetable, canola, or peanut oil for frying

Oops! Looks like I had a little mix-up in the video-I called yautía (malanga or coco yam) ‘taro root’ by mistake. While they’re both starchy roots and often confused, yautía has its own unique appearance and flavor.

Great video Mari. I run the hot water from my faucet over the plantains, which makes the plantain skin easy to pull off in one piece. I then use that cascaa, to press my tostones. Be well and Merry Christmas.

¡Se ven riquísimas! Voy a intentar tu receta. Las he hecho con yautía solamente, pero esta receta de seguro sabe mejor. Para echarlas a freír, descubrí que con el “parchment paper” era más fácil, pues de ahí mismo las transfería al sartén.
