    It’s hard to overstate how much this cooking was foreign to the American palate of the time. Foodie culture was practically nonexistent. She was incredibly daring and ambitious in a way that’s hard to feel today, and her public responded to it. Stores routinely ran out of the ingredients for her recipes after her shows aired. Refusing to condescend to her audience, she showed them exactly what she had learned in France and it was beautiful.

      So true, her cooking was exotic to kids watching her in the 60s. I loved watching her.

    Julia Child was cutting edge in her day. Up until then there weren’t any cooking “shows”. And French cooking was a mystery to most Americans. I love watching her!

    I never saw these, and now am glad to have them, the techniques either remind this home cook what I should be doing lol or confirm I have it right.

    We now have frighteningly super-sized shallots, compared to what they were when this series was filmed in the 1960’s. I wonder what shallots have been fed….?
