I used to eat this in Malaysia, I don't know the dish name.Thanks for Cooking this.
Why is it useful to take out chicken for 1 min to cold water and then put it back to hot water? Do we salt the water for boiling the chicken?
1. It makes the chicken skin smooth and tender 2. No need to add salt. Main taste is from the chili oil sauce. :D
