uh While i do agree with you there are a few things, but some of what you said are a bit too generalized. like the first one, Amul is very prominent and might be the Dairy company with the most sales, but their sales are not that significant in a lot of states. Dont get me wrong, they do cover a very significant chunk, but not all. A lot of southern states, specially Karnataka mostly prefer their native brands over Amul. So yea, every indian may have eaten amul's product, but its not a go to for everyone. the layered paratha is made in a lot of places, in south however, Malabar, Ceylon, Coin etc type of Parotta's(or Barotta in some places) are famous, while North has similar varient known as Laccha Paratha. Paratha and Parotta are essentially the same word, though the pronunciation changes..the recipe also remains more or less the same, with some minor tweaks. However parotta just generally signifies the flat bread has connection to the south, while paratha usually signifies its from north(Same same but different lol).
Not Indian, but I have made a lot of lassi with my work (we do /a lot/ of specialty menus) and we've always found that using mango nectar creates a better flavour and mouth feel than actual mango chunks. Sprinkling cardamon on top (freshly grated or reg powder) also really brings out the flavour!
With whole mangoes Hapus is the best variety. It becomes absolutely creamy and smooth. Totapuri, Rasbhari, Banganpalli types are very watery and make a subpar Lassi. Mallika is another variety which can make a good Lassi.
That's Dairy Whitner Milk Powder is totally different. Milk Powder is not commonly available in the shops as mostly Halwai n hotel ppl use Milk Powder not Dairy Whitner.
Hey! So a major reason why your raita, mango lassi tatsed different is because they're traditionally made from curd and not yogurt. Surprisingly enough, they are two different items, one is made from lactobacillus while the later also includes streptococcus thermophillus. Its really easy to make dahi or curd at home with inoculum or vinegar, lemon etc but practically impossible to make yogurt from scratch. Hope this helps!
Next time if you ever make Indian food again you gotta make kaju katli. It’s an Indian dessert that is basically cashew fudge with edible silver on top it’s delicious and has a bit less sweetness than gulab jamun. I’d also recommend some South Indian recipes like idli and dosa both of which are great for the gluten free people in your life. So fun! I’m not Indian, but I was introduced to chickpea flour (or as I’ve always heard it called, either besan or graham flour, depending on where the recipe is from) many years ago and it is SUCH a good pantry staple! It’s cheap, nutritious, and extremely versatile! You can use it in both savory and sweet recipes just like wheat flour, so sometimes I’ll swap out a portion of AP flour for besan when I’m making something like muffins but want some extra protein and fiber to make them a little healthier. The great thing is that they don’t TASTE “healthy”, just delicious and soft! And if you’re ever concerned about tasting chickpea (though you probably won’t), just add some more of whatever spices you are using. Works great in quick breads! Also great for us poor people because it’s so economical. 😊

I'm American and came to comment about the Tamarind Chutney and Mint Chutney Just SOOOOOOOOOOOO GOOD.
