About the same as a ginger mead I made beginning of this year. I only wish I had carbonated it into beer bottles. Would have been a good replacement for ginger beer in various mules

I got the hydrometer, my apple wine and watermelon wine say it's beer lol.. did I mess up??
hello friend, ive been looking for answers to a question ive had for a while now, which sort of stabilization after backsweetening (ie: pasteurization or chemical stabilizers) is the best for long term storage (more then 3 years) if you could give me any sort of insight into this subject it would be much loved.
Pasteurization would probably be your best bet. Some chemical stabilizers can supposedly produce an "off" taste after 1-2 years of storing. I have never noticed the taste, but some of the aficionados on wine forums say that they do.

The honey was warmed up to allow for easier extraction.

Sorry, couldn't tell you. None of my brews have gone more than two years.

Have you tried without peeling the ginger? I used to peel but I cant taste a real difference between the two.
