One of the things I don't think was properly impressed on the viewer is the very stark class division between the Barber-Surgeon and the physician - this barber talks about uromancy (what we would call today 'uroscopy') but that was very much a physician's job; the barber was a manual worker and not trained in that sort of thing, certainly not to the extent of humoral theory. Surgeons weren't educated at all, and a physician would never stoop so low as to perform bloodletting or amputations. There's a reason why modern-day surgeons retain the title 'Mr' as opposed to the learned 'Dr' title.
Hirudin is what we use leeches for today, among other things. In cases like the dude mentioned, reattaching a finger, then a number of substances in leech saliva are useful for promoting blood flow back into the reattached finger, and preventing clots.
